Last night we had the most incredible dining experience at Talat Market curated by the brilliant Chef Parnass! Here's a glimpse into the gastronomic magic that unfolded for their special vegan dinner night:

First Wave: Beet Tartare & Fruit Salad
The journey kicked off with a symphony of colors and flavors! The beet tartare was a work of art, each crispy bite of shallot burst with rich supplemental flavors from the fried potato, lime leaf, and nori oil. Paired with the perfectly balanced fruit salad; asian pear, kumquat, gooseberry, cashew, coconut, mint herbs, sesame. The Fruit Salad was a dance of sweet and savory perfection.

Second Wave: Grilled Mushroom & Broccoli, Steamed Chickpea Tofu, Braised Daikon & Sauerkraut Broth, Garlic Rice
The second wave was a feast for the senses! The grilled mushroom & broccoli stole the spotlight with an unbelievable flavor. The oyster mushrooms were perfection, having a ‘steak’ like imitation that left us wanting more. The sauce elevated everything on the dish, and the microgreens were a beautiful touch with a light peppery kick. The steamed chickpea tofu was a revelation – so light and yet so satisfying. We heard from staff, this one that can be easily made at home; albeit not as well as chef Parnass.

Dessert: We were too excited to eat the dessert, that we forgot to get a photo. So, we will leave it to your imagination. As you can see from the photo of the empty bowl, not a single bite was left behind.

Service Beyond Compare:
Shoutout to the Talat Market team for the flawless, meticulous service. Everyone created an ambiance that made the evening unforgettable. Throughout the meal, the staff The attention to detail did not go unnoticed! Everyone meticulously worked collectively to take drink orders, clear dishes, change over silverware, and engage about the food flavors and creation. Where so many of these moving pieces could have created issues, the staff handled every single detail with unparalleled poise.

This was a special event, but be on the lookout for them to host another vegan night again because I guarantee you do NOT want to miss it. Thank you Chef Parnass for crafting a vegan experience that exceeded all expectations! The creativity and attention to detail in every dish were simply outstanding.
