All of Molly's pups went to new families for Thanksgiving except for Boulder and he got to stay a little longer. He is still looking for a new family to entertain. He is such a pretty , sweet boy and we have enjoyed playing with him. For more information please message us.

Pecan Pie Cookies 🍪🌰

Ingredients:

For the cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
¼ tsp salt

For the pecan filling:
1 cup chopped pecans
½ cup brown sugar
¼ cup light corn syrup
2 tablespoons unsalted butter, melted
1 tsp vanilla extract

Directions:

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Scoop out 1 ½-inch balls of dough, place them on the prepared baking sheet, and gently flatten the centers to create a small indentation.
In a bowl, mix the chopped pecans, brown sugar, corn syrup, melted butter, and vanilla extract to make the pecan filling.
Spoon about 1 teaspoon of the pecan mixture into the center of each cookie.
Bake for 10-12 minutes or until the edges of the cookies are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Kcal: 150 kcal per cookie | Servings: About 24 cookies

Tips:
Chill the cookie dough for 15 minutes if it becomes too soft to handle.
Toast the pecans lightly before chopping for a deeper, nutty flavor.
