This weeks Microgreen Spotlight we will discuss Wasabi!
Wasabi microgreens have a bold, spicy, horseradish/wasabi flavor. They can be served on top of sushi, tossed in a slaw, or added to burgers. Add to any dish you desire these will add a spicy mustard-like flavor.
For 2 cups of wasabi microgreens, you are getting more potassium than 1 large banana! Borage is another contender in potassium! These microgreens have 470 mg of potassium for 2 cups! But what's more, they are a good source of Iron, and meet 140% of your daily value for Vitamin A!
This week we are making pesto,
Simple Microgreen Pesto
-2 cup (your favorite) micros
-Tbsp pine nuts
-4 peeled cloves garlic
-1/2 tsp sea salt
-4 Tbsp Nutritional Yeast
-2-3 Tbsp extra virgin olive oil or avocado oil
-4-6 Tbsp water or as needed for consistency
Combine and blend in food processor, stores for up to a week in refrigerator, or frozen for about a six months.
