Wondering what to make for dinner this week?

We don’t get tired of roasts! While it can be easy to make the “old faithful” recipe - here’s a swap to spice things up!

Roasts are extremely versatile and are definitely a favorite of ours. And birria is an amazing use of some delicious beef. You can use it to make tacos (🤤), chipotle bowls, or even pizza. (Last week we made sourdough naan bread, topped it with birria, cilantro, pickled red onions, and sour cream.)

Obviously using our beef does make it extra tasty. The next butcher date is in August and is filling up!

If your are in need of beef We have 2 beef left for the year that are not spoken for. they will be going in in October. $3.75 a lb carcass weight includes processing. We will not have any more ready until springtime.

We have a 1/2 beef available for purchase. Was just taken to the butcher this morning. It will be processed by Stutzman brothers or Mishler meats just east of Sturgis. Message us or call me 269-625-6904 if you have any questions or would like to order the 1/4 or 1/2. It would be ready in approx 12-15 days!

We get a lot of questions when someone wants to order a 1/4 or 1/2 a beef. It’s confusing not knowing exactly what your getting for the price you pay,so I broke down a 1/2 beef and made a list of what you will get when ordering a 1/2. Although you do not specifically need to order it this particular way. You can customize your cuts to the thickness of steaks to ordering one cut you like better vs. another.

Burger 162lbs
Roasts 46lbs
Sirloin steaks 10lbs
Ribeye steak 12lbs
Ny strip steak 8.5 lbs
Brisket 20lbs
Filet/tenderloin 4lbs

This makes the actual price per lb of actual meat just as you would buy in the store $6.00 a lb. hopefully that’s understandable on how it is broke down.

We interseeded a mix of cover crops into this soybean field late last summer. It grew while the beans were drying down to harvest. After we harvested the soybeans I grazed some calves out here until janurary. Now that the weather has turned warmer the cover crop is coming back again. Also holding onto leftover nutrients from the soybeans and creating new channels for water to infiltrate through the soil. These calves will spend about 45 days out here grazing and fertilizing the field then we will plant corn into this around the middle of may.
