Wednesday I actually had time to cook a recipe Ive been working on. Mushroom Black Tea Gravy- the most amazing mushroom gravy ever- hubby says it’s a food group. I experimented with a little filming, just in case it turned out well. Wednesday became paving project Thursday, then Friday more paving and market prep, Saturday storms and mayhem, so today is finally posting day! DELICIOUS! Started this year with chicken fried oyster mushrooms and cheese waffles. Continued with sweet lions mane and strawberry tempura. Our summer menu declares this the summer of mush love…and I am in love with mushroom poke. Poke may essentially be a fish salad, but it isn’t poke without the shoyu dressing. Our mushroom poke doesn’t celebrate the 🐟, (though you can include it), it’s all about the mushrooms 🍄🟫. And the shoyu dressing. Now, a vegan dish with a seafood adaptation! Jeff took this to work yesterday and non-vegan coworkers thought he had the BEST lunch.

Brewing Iced Roaring Lion Tea:
Add the tea bag, 1 slice of orange, 1 thin slice of ginger to a 16oz mug. Pour over boiling water. Let cool, then refrigerate. Remove bag and fruit before refreshing yourself on a hot day:)
Brewing Iced Lazy Lion tea:
Brew as you would hot tea, with 16oz boiling water. Allow to cool, refrigerate, enjoy!

Market life gives us the opportunity to meet other farmers and food artisans that we really appreciate- today they were the inspiration for umami cream cheese. Never thought of it before but WOW! Mushrooms really make everything better.
Umami Cream Cheese
Soften your cream cheese in the microwave for 10-15 seconds before blending it with instant umami. About 1/2 tsp instant umami to 1 tbsp cream cheese. Add salt to taste, increase instant umami as you like. Enjoy!

Inspired- by @eggbertsfreerangefarm and Carrie pointing out that I could make tartare with her beef, it’s so good. Turns out she was right! Of course, no surprise I’m sure, I ended up making a chestnut mushroom spiced beef- Ethiopian kitfo style, inspired by @marcuscooks! The chestnut mushrooms and shallots are minced fine and sautéed in niter kibbeh with a roasted spice powder. I turned off the heat before blending in the beef (leb leb style is just slightly cooked) and the mushrooms and the beef and the spicy heat were married in the best possible way. Yesterday I saw what I thought was a sweet potato from across the market. I had all sorts of ideas about what to do with that sweet potato and some mushrooms. Then I found out it was a daikon radish, and really started thinking. This is what I mean by inspirational ingredients. Perfect timing, because today we have lots and lots of oyster mushrooms!

We’ve been pretty heartbroken these two Sundays. When something goes wrong on the farm, it can take 2 weeks to fix. Luckily, this is the 2nd week, so next week production should be in full swing.
Still, I had to do something to make it feel better, so I started working on a new recipe for dried mushroom medleys. It turned out even better than I expected!Forget our old Super Bowl nacho recipe, try THESE:
Nacho Mamas Nachos
2 packs dried mushroom medleys crushed tiny
1 cup hot water
1 tsp each: chili powder, smoked paprika, ground annatto (if you have it- I got mine at ShopRite)
1/2 tsp each salt, crushed red pepper, garlic powder
1/4 tsp dried oregano, black pepper
15 oz can diced tomatoes
3 tbsp oil
Fresh cilantro
Pour the hot water over the crushed dried mushrooms and let it sit 5 min. Combine all the spices and sugar in a bowl, and add to the mushrooms, mix well. Let sit for another 5. Heat the oil in a skillet (use cast iron if you can), when it sizzles, add the mushrooms. Spread out so they cover the whole pan. Cover for about 3 minutes, then stir and spread out again. Do this two times more, when you stir, make sure you scrape any browned bits from the bottom. Uncover and add the diced tomatoes and about 2 tbsp of minced stem of cilantro. Stir and cook for another 3-5. Taste and adjust salt if needed. Serve on top of corn chips adorned with fresh cilantro leaves and cheese of your choice. Enjoy!
