Today in Beacon…

When I started this project I had no idea what I was getting into. I’ve always thought of ramen as super simple, but no, to combine a variety of flavors and textures to make a dish that you start eating with your eyes right away? Not so easy. Hope it’s worthy. I only made 12. That’s why we are a test kitchen.

Who are these handsome gentlemen?
It’s the Four Wall Farm family! Today was our last day of nachos for a while…and the first day of French onion mushroom soup. Next week we are hoping to explore ramen.

You’ve GOT to try this!
Playing with my food again today. I’ve been thinking about this broth for some time now, hoping it would come together. And it has!!!

Today it was the base for French onion-style mushroom soup. In the future I see it as part of a ramen bowl. I ❤️ mushrooms. Maybe we will have this on Sunday !

Share our new obsession this weekend!

For the first time we will be serving our new Chocolate and Musbroom elixir…at NYMS Fungus Festival! Come taste the smooth chocolatey goodness.

Tomorrow, Manlio and Chuck will hold the Farm down in Beacon, while the Test Kitchen goes to NYC! We are so excited to be bringing our mushroom menu to this venue (couldn’t help myself). See you in Beacon! See you at the Fungus Festival!

NYC Fungus Festival is coming!
Believe it or not, I’ve been trying to figure out the art (and everything else) for a special sign since April. Eventually, it came together, and just in time! Luckily, it should be ready for this coming weekend. Right. On. Time. Whew!

What a week!

I’m going to start trying to do a weekly pictorial review…let’s see what happens.

Page 1&2 New recipe this week! Instead of a summer menu, this year we created a “Mushrooms for Morons” basic cooking guide- but included is a new recipe for lettuce wraps. A simple saute and a delicious and healthy meal awaits.

Page 3&4 - Playing with my food. Lettuce wraps and somen noodles with fresh veggies and misozuke pickled mushrooms. Greens filled pansotti and salsa di noci are topped with simple sautéed morels. It took 3 hours to make the pansotti and sauce, but it was worth it:)

Page 5 - this week we lost our beloved cat, Burton. For 16 years he has been my dear companion, and for the last five my constant one. We already miss our family couch cuddles and morning meows. The tears will eventually stop, but the memories of the joys he brought will hopefully never fade. Never has such a little cat cast such a large shadow.

4 Wall Farm May Calendar

Lots of stuff happening this month! All the construction stuff isn’t on the calendar at all- but it’s happening. Behind the scenes we are rebuilding our burnt out grow room. On May 17th the 4 Wall Farm Test Kitchen is doing its first solo event- at the party for Wappinger’s 150th birthday. May 24th is our first day at the summer Tarrytown & Sleepy Hollow (TaSH) Farmers’ Market. We are really excited to be starting our fifth summer season! Hoping for sunny skies, balmy weather, and lots of smiles.

A special note…

While we wish you a good Solstice and happiness in the renewing year, we also want to make a request.

In this time of festivities, many people feel lonely, sad, or as if they can’t live up to the happiness standard. Please take time to reach out to friends, especially during the long nights. Be ready to share yourself by actively listening, validating, and offering unconditional love to those around you. The holidays are not a magical cure for mental health challenges, in fact, this time of year can be extra hard, with its pressure to put on the happy mask. Mush love y’all.
