What a week!

I’m going to start trying to do a weekly pictorial review…let’s see what happens.

Page 1&2 New recipe this week! Instead of a summer menu, this year we created a “Mushrooms for Morons” basic cooking guide- but included is a new recipe for lettuce wraps. A simple saute and a delicious and healthy meal awaits.

Page 3&4 - Playing with my food. Lettuce wraps and somen noodles with fresh veggies and misozuke pickled mushrooms. Greens filled pansotti and salsa di noci are topped with simple sautéed morels. It took 3 hours to make the pansotti and sauce, but it was worth it:)

Page 5 - this week we lost our beloved cat, Burton. For 16 years he has been my dear companion, and for the last five my constant one. We already miss our family couch cuddles and morning meows. The tears will eventually stop, but the memories of the joys he brought will hopefully never fade. Never has such a little cat cast such a large shadow.

Four Wall Farm in June

What adventures do we have in store for June?

1) We are hoping to bring fizzies to TaSH
2) As the weather gets warmer, the Four Wall Farm Test Kitchen is bringing a new dessert! A summer riff on our Lion’s mane tart- a delicious sundae made with ‘s vegan vanilla

4 Wall Farm May Calendar

Lots of stuff happening this month! All the construction stuff isn’t on the calendar at all- but it’s happening. Behind the scenes we are rebuilding our burnt out grow room. On May 17th the 4 Wall Farm Test Kitchen is doing its first solo event- at the party for Wappinger’s 150th birthday. May 24th is our first day at the summer Tarrytown & Sleepy Hollow (TaSH) Farmers’ Market. We are really excited to be starting our fifth summer season! Hoping for sunny skies, balmy weather, and lots of smiles.

Ok, we ended up making three soups this week- but we aren’t selling any of them. Please buy soup from Beacon Farmers Market as we raise funds to increase community access to delicious, healthy foods.

But we have 2 delicious sandwiches to go with your soups! AND a mushroom dessert:)

A special note…

While we wish you a good Solstice and happiness in the renewing year, we also want to make a request.

In this time of festivities, many people feel lonely, sad, or as if they can’t live up to the happiness standard. Please take time to reach out to friends, especially during the long nights. Be ready to share yourself by actively listening, validating, and offering unconditional love to those around you. The holidays are not a magical cure for mental health challenges, in fact, this time of year can be extra hard, with its pressure to put on the happy mask. Mush love y’all.

Wow! Second week of Shroomwalla at the 4 Wall Farm tent

This weekend’s menu features 4 Wall Farm mushrooms in a mushroom chorizo taco topped by a persimmon tomato pico made with persimmons grown by , nestled into hand made tortillas made fresh by Chef Juan . This weeks soup option is a trumpet & oyster mushroom chili.

The food adventure last week was wonderful! We really appreciated everyone, new friends and old, who came out to taste our mushroom fusion cuisine. We are really hoping to “bring it” as we move towards the holidays, with more and more decadent and delicious ways to enjoy mushrooms.

There will always be at least one vegan option, because mushrooms are for everyone:)

It is a beautiful day. The first hot tea day of the season. Spirit of Beacon day. And we are celebrating with wild mushroom medleys, a new recipe for king trumpet scallops, and lions mane, tigers and bears, oh my!

Golden oysters always feel sunny and bright, no matter the temperature. And what is this temperature??? Doesn’t matter, whatever it is today, it will be something entirely different tomorrow. Thank goodness for bright mushrooms grown indoors!
