This is Patches, her previous owner reach out to us last summer after a dog attacked her flock of 5. Patches was badly hurt and wasn’t sure if she was going to make it. I told her then that as much I wanted to help her the summer are very busy for us and we couldn’t give her the special care she needed at that point. She took care of her and Twin until they recuperate and reached out to see if I would take them to ensure their safety. I left them on a smaller coop for two weeks and then started incorporating them to the flock slowly to make sure they didn’t get hurt since they had been through so much already. I named her patches because she lost one of her eyes from that attack but that didn’t change her happy personality. Patches and Twin are part of our flock of 10. 🐓🖤🖤🖤🖤

Grilled Chicken Thighs with Farm Honey and Dill.

Vegetarian Caribbean Oil-Down. Grenada’s national dish. A hearty one pot dish made with starches like breadfruit, plantain, corn, okra, eggplant, & farm callaloo, and farm spices. The whole thing is stewed in coconut milk, curry, herbs to add even more flavor. In this case we will add tempeh (fermented soy used since 12th century).

Farm to Table Dinner Utilizing freshly picked produce from Cedillo’s & Cooked by the hands of the Urban Pilón Chef Roberto.

Para Picar:
Cedillo Spinach Spread + Homemade Dill Cheese + Homemade Cedillo Tomato Bread

Para Tomar:
Agua fresca de Viva la Horchata: Limonada de con Manzanilla y miel de Bee-utiful Honey

Para Empezar:
Calaloo & Wild Spinach in a home
made fish stock.

Para Empezar:

(Cedillo Freshly Harvested Farm Salad)

Para Comer:
“Vaho nicaragüense” or baho (‘ba.o) a layered mix of yuca (cassava), sweet and green plantain, vegetables, spices, citric flavors, chicken thighs on the bone, and beef shank (all marinated for 2 days) slow cooked in banana leaves an estimated 8 hours. Served with my rendition of a spicy refreshing cabbage condiment made with vinegar and vegetables.

We are always in need of volunteers.
These are the days we will be taking volunteers at the farm and garden.

Mondays 9-1:30
We will work at the Farm
Weeding, transplanting, trellising, moving compost, moving wood chips, tending to the chickens needs or building things needed at the farm.

Thursdays 9-1:30
We will be working in the garden
Weeding, transplanting, trellising, moving compost, moving wood chips,
We also always need support watering the garden.

Fridays 8:30-1:30
Harvesting for CSA and Farmers markets
Can also used assistance delivering CSA bags.

Saturdays 9-4
We can used assistance any amount of time from the hours of 9-4 for farmers markets.
We will be at Mercado De Colores in Little village every Saturday starting June 1st until October 5th
At Plant Chicago every 3rd Saturday of the month.
At the Englewood Village Farmers Market starting June 22 until October 26th

Sundays We will be working at the farm some Sundays please be on the lookout on our stories or reach out to verify we will be there.

*We will cancel volunteer days if raining with the exception of harvest days.

Are you ready for the third round of Farm to Table dinner with ?

The star of the Caribbean Culinary Experience will be the “pilón” or mortar and pestle. This ancient kitchen staple will be the centerpiece of our farm-to-table experience.

One of the main dishes we’ll be making with the pilón will be the delicious mofongo and its many variations.

What is mofongo? Garlicky fried and mashed plantain — sometimes mixed with other starches — often paired with soups and stews.

For some historical context, the mofongo from Puerto Rico, mangú from the Dominican Republic, and machuca from Central America all have its roots in Africa. They could be considered our interpretation of fufu made in Nigeria and Ghana.

Our word “mofongo” itself appears to stem from the Angolan Kikongo term “mfwenge-mfwenge”, which means a great amount of anything. Similarly, the noun “mfwongo” meaning “plate” or “flat surface”, is also found in another variant of spoken Kikongo.
