Three of our four person team members enjoying some brunch. Each of them are a crucial and well functioning component to the Garfield Produce Company team. These guys make sure all our crops are taken care of, the facility maintains its cleanliness, the products we grow are harvested carefully and orders are packed and shipped out to our customers. Without these awesome guys, Garfield Produce wouldn't be where it is today or where it's heading in the future and we have some exciting things happening because of them and we here at appreciate all their hard work and dedication.

Today’s summer recipe featuring our Micro Cilantro comes from our very own Farm Manager! This refreshing BBQ-inspired salad will be the perfect light meal for these hot days coming up.

Salad:
- 2 cans chickpeas roasted on the stovetop with 1/2 cup BBQ sauce
- About 4 cups of any lettuce (we used a mix of romaine, arugula, and spinach)
- 1 carrot ribboned
- 1/2 red onion diced
- 3 green onions chopped
- 1-2 oz Micro Cilantro
- 1/4 avocado

Dressing:
- 3 tbsp tahini
- 1 lemon juiced
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- Pepper to taste
- 3-6 tbsp water

Happy first day of summer! We wanted to take some time to highlight our Micro Cilantro! This product is a great addition to any summer recipe, adding that fresh, spicy, and refreshing taste. Micro cilantro has a slightly different aroma and flavor from full-grown cilantro, minimizing the "soapy" taste some folks can get from cilantro. You can try it for yourself on WhatsGood.com, at Plum Market (in Oldtown), or at Village Farmstand (in Evanston)!
