Today is World Chocolate Day so I thought it would be a good day to share this recipe with you.

Honey Chocolate Truffles
Ingredients:
8 ounces (225 grams) dark chocolate, finely chopped
1/2 cup heavy cream
2 tablespoons honey
1 teaspoon vanilla extract
Unsweetened cocoa powder (for rolling)
Optional: Finely chopped nuts, shredded coconut, or powdered sugar (for rolling)
Instructions:
Prepare the Chocolate:

Place the finely chopped dark chocolate in a heatproof bowl.
Heat the Cream:

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
Combine Cream and Chocolate:

Pour the hot cream over the chopped chocolate. Let it sit for a minute to melt the chocolate.
Stir in Honey and Vanilla:

Add the honey and vanilla extract to the chocolate mixture. Stir gently with a spatula until the mixture is smooth and fully combined.
Chill the Mixture:

Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to scoop.
Form the Truffles:

Use a small cookie scoop or a teaspoon to scoop out small amounts of the chocolate mixture. Roll each scoop between your palms to form a smooth ball.
Coat the Truffles:

Roll each truffle in your choice of coating: unsweetened cocoa powder, finely chopped nuts, shredded coconut, or powdered sugar.
Serve:

Place the coated truffles on a baking sheet lined with parchment paper. Chill in the refrigerator for about 30 minutes to set before serving.
Store:

Store the truffles in an airtight container in the refrigerator. Allow them to come to room temperature before serving for the best flavor and texture.
