The ducks are happy to be out in the raised bed on such a beautiful day. I’m just growing spearmint in there, otherwise I would need to add some more height to keep them out.

“Where are the ducks?” We hope the ducks will be back in the front yard soon, but there have been tons of HAWKS around and we can’t risk having them out untended. So, they are safe in their large duck run until that hawk predator pressure decreases.

What’s up with the unwashed eggs? You can gently scrub them under water that is at least 10 degrees warmer than the egg. This draws unwanted elements away from the egg. I use a dedicated green kitchen scouring pad.

We have started selling some of our eggs unwashed at Debra's Natural Gourmet. Customers have been asking about unwashed eggs for years, and we are glad to have a retail partner that is on this adventure with us!
Like chickens, when ducks lay an egg there is a bloom that coats the egg and prevents bacteria from entering the shell. Compared to duck eggs, chicken eggs are cleaner-looking out of the nest because chickens are less muddy and splashy than ducks, their waterfowl cousins.
Most of the world doesn’t wash their eggs, and America used to not wash eggs. But in the 1970s, American egg producers started washing eggs. These eggs look shiny and clean, but they must be refrigerated. And once eggs require refrigeration, they can be held in supermarket refrigerators for longer time periods. You can read more here.

In many countries, eggs aren't refrigerated and they're still considered safe to eat. But in the U.S., we have to chill them, because we've washed away the cuticle that protects them from bacteria.
