What gives an egg it's color?

Myth: Brown eggs are healthier than white eggs.

Truth: The ancestral avian eggshell is believed to be both white and immaculate... meaning without spots. whilst the eggshells of modern birds are diverse in both colour and maculation (spots).

So what's in the color of an egg?

White eggs are the original egg color of chickens, it is simply the calcium carbonate deposit of the shell, which is white. So it is calcium carbonate without any other pigment, making it pure white. Jungle fowl the presumed predecessor of the domestic chicken, lays small white eggs. The gene for white egg color is "o", this gene is called "wild type" as it is the unmutated version of eggs.

Brown eggs are still a scientific mystery today. It is believed that brown eggs are colored in the uterus and that color is deposited over the calcium carbonate shell as it is being made, with a dye called protoporphyrin, but why and how is still largely unknown. Because the brown color is really a dye being layered on top of the calcium carbonate shell, the inside of a brown egg will always be white. Think printer ink being deposited onto white paper, although the image may have color on the surface of the paper, when you turn the paper over it remains white.

Blue eggs are not so much a mystery. The blue egg gene which is represented by "O" is a mutation that happened as a result of a retrovirus that changed the DNA of infected birds, resulting in blue eggs in birds that have inherited this DNA mutation. The blue color is deposited via bile secretions at the same time as the calcium carbonate egg shell is formed higher up in the reproductive system and before the egg reaches the uterus. Unlike ink on paper, this coloring is more like a colored sheet of construction paper. It is blue even on the inside.

What about green eggs? Green eggs start out as blue eggs in the oviduct, just like any blue egg, by bile secretions that have been deposited into the calcium carbonate. Because a blue egg laying bird was crossed with a brown egg laying bird, it has also inherited the protoporphyrin dye layer of the brown egger. This brown dye is deposited on top of the blue egg which turns the egg shell green. The shade of green depends on both the shade of blue base and depth of the brown pigment deposited on the blue egg.

My poor little girls are getting tired of the rain too. Muddy feet and muddy feathers .. I suspect they should be laying some beautiful but muddy eggs soon.

These are LARGE geese , not for backyard setting. They graze 90% on pasture vegetation so that is a requirement for their new home. Must take male / female pairs. I will not separate just the females.
