Decorah and surrounding area friends, we are processing a Wagyu steer this week. It’ll be ready for pickup about 10 days later. We’re offering a stay-at-home, rock bottom, introductory special, because all of you are doing such a fine job of toeing that line, you deserve to treat yourselves to a little locally grown American Kobe Beef.
If you’ve never had Wagyu, you’re in for a treat. The meat is tender with a very rich flavor. Not only is it scrumptious, it’s healthier for you than conventional beef. It’s higher in Omega-3 , Omega-6, and oleic acid than your average choice meat. And you have the comfort in knowing it is raised locally and humanely, free of hormones and antibiotics.
This breed, from Japan, grows at a slower rate than the beef you find in the store. The fat marbles through the meat, rather than stored as back fat. The fat has a much lower melting point, such that it can literally melt in your mouth. Because of this you will want to cook with care, and err to the rare side. Please, not well done. ;)
Because we’re not using a USDA processor, we cannot sell individual cuts, this time around. We need to offer it as pre-ordered bundles. We can do as small as a 1/8th portion. If my estimates are correct, that should be nearly 80 pounds of meat. It’ll be a mix of ground, ribs, steaks and roasts. There will be a couple of briskets up for grabs, first come, first served. Because these animals are raised longer, regulations prohibit keeping the spinal column, so there will be no T-bones.
