Hey Guys 😊

This is a friendly reminder for those that may not be on Instagram or receive the emails that due to the incoming weather systems, our favorite wellness centric Coco Market that was to be held this Sunday (tomorrow) at Old School Square has been cancelled. It is for the safety of everyone as flying umbrellas and tents are no joke! As painful as it is for us to be in this situation and not get our monthly fix of market fun seeing everyone, I view this as an opportunity for growth. Instead of dwelling on seemingly negative aspects, I think these are learning points and chances to try something different. Hopefully this outlook can help serve as a reminder for those also facing something difficult.

I am very grateful for those that have already come through with their orders, but we still have so much! If you or someone you know may be interested, I will be running deliveries through Wednesday morning in addition to our regular Monday route for subscribers. Microgreens are more than just a garnish, but sometimes they are…just a garnish 😆 We love to see it though especially when paired with a refreshing and healthy watermelon gazpacho 😍

One of my favorite salads I’ve made so far utilizing micros- sliced cucumber using a planer on the bottom and topping with Broccoli, Red Acre Cabbage, China Rose Radish, and honey roasted beets. Roasted with avocado oil, thyme infused honey from , and salt/pepper at 410 for about 20 minutes or so😍
Topped the steak with sirloin with some Chervil. I don’t like the licorice taste by itself, but with the meat it was a whole different story. Finally the cilantro lime rice with some Red Panda Sorrel because why not.

We are so happy to announce that this Sunday at Coco Market we will be offering made to order Avocado/Microgreens over Local Sourdough Slices from 😊😊 We actually thought about doing this in the past, but had trouble sourcing non-corporate owned brands (like 2 or 3 major companies own the dozens of brands you see on shelves) and are filled with terrible additives for shelf stabilization…what are the odds we are now going to be neighbors on Sunday! Be sure to stop by and grab a slice of deliciousness and show them some love for their first time at Coco Market! 💚🌱

Almost nothing makes my heart more full to see how much love people put into beautiful, tasty, and nutritious creations with the microgreens from Little Lush Acres!
Here my friend prepared a Toasted English Muffin, Tijun Chili-Lime Hummes, sliced hard boiled egg, red pepper chili flakes, and crunchy Broccoli greens as the topper. She also makes some of the best soaps I’ve ever seen at a great price so please go follow her page as well! Thank you 💚🌱

The baby carrots 😭 Was just having some fun using churrasco garnished with chimichurri & Pea Tendrils, carrots with Chervil, and white cheddar Mac with Red Garnet Amaranth. The salad was a spicy blend of Radish, Brassicas, and a bit of Amaranth using some strawberries to cut the heat. Utilizing micros in meals has definitely helped my own cooking skills and try new things while feeling good about getting the nutrition the body needs 🌱

Pea Shoots- Not only beautiful, but a nutrient rich addition or base to any meal. There is no wrong way in our opinion to use them as we add to most salads, sandwiches, and even soups, but we suggest to add them raw as to not denature their compounds through high heat. However, adding them to a grilled cheese with brie, red onion, and avocado is also recommended 😁
