🌱 Why we grow microgreens (and why we think you should eat them).
A microgreen is just a baby version of a familiar plant — broccoli, radish, sunflower, pea — harvested 7–21 days after the seed sprouts. Tiny. But research keeps pointing to the same thing: in those first weeks, the plant is packing in vitamins, antioxidants and minerals at concentrations many times what you'll find in the mature vegetable.
