Peach Cobbler 😋
I managed to get some sweet, juicy, delicious 🍑peaches 🍑 frozen for future peach cobblers...which are my absolute favorite fruit and dessert. 🍑 I'm always sad to see peach season go.
This recipe is one that my step‐mom taught me how to make when I was young...I still make it! Although now it's gluten free. The recipe is below...

Bake 375, 40 - 45 min.
2 Cups fresh peeled PEACHES 🍑
1 Tbls cornstarch
1/2 Cup sugar
1/4 tsp salt
Cinnamon
Topping:
1 Cup GF flour (or regular)
1/3 Cup milk (or milk alternative)
1 1/2 tsp baking powder
1/2 tsp salt
1/4 Cup sugar
1/4 Cup butter
*I used Bob's Red Mill 1 to 1 ratio gf flour and cashew milk. I also love generous amounts of cinnamon in the peaches and the topping with a few dashes of clove. The pictured recipe has been doubled.
Mix 🍑 PEACHES 🍑, sugar, cornstarch, & salt together and put in greased dish. Sprinkle with cinnamon.
Next, sift flour, baking powder, salt, & sugar together. Cut in butter until fine. Add milk* & stir w/fork into a soft...sticky dough. Drop by spoonfuls onto peaches. Sprinkle with sugar, cinnamon, & nutmeg...and maybe some ground clove.
* Gf flour... you may need to add a bit more milk if doing this gf.
