Delicious Brown Sugar Chops

Ingredients:

4 thick 1 inch pork chops

4 tbsp brown sugar, packed

4 tbsp butter

1 tbsp soy sauce

1 tbsp Worcestershire sauce

Instructions:

FIRST STEP:

Set your oven to preheat to 350F.

In a large bake oiled oven pan, lay your pork chops.

SECOND STEP:

Add one tbsp of brown sugar on each piece of meat.

Next add a square tbsp of butter on each pork chop as well.

THIRD STEP:

Lastly, drizzle both the soy and Worcestershire sauce over.

Using tinfoil, cover the pork chops and bake for 40 mins in the oven.

FOURTH STEP:

After 40 minutes is up, remove the tinfoil and continue to bake for 20 minutes.

Pork chops will be golden brown!

Crock Pot Crack Potato Soup

Ingredients:
6 cups diced potatoes, peeled
1 cup shredded cheddar cheese
1/4 cup cooked and crumbled bacon
1 packet of ranch seasoning mix
4 cups chicken or vegetable broth
1 cup heavy cream (or half-and-half for a lighter version)
Salt and pepper to taste
Optional garnishes: extra cheese, bacon bits, chopped green onions, or chives
Directions:

Prepare the Potatoes: Peel and dice the potatoes into even-sized pieces to ensure uniform cooking.

Loaded Potato Meatloaf Casserole

Ingredients:
1 lb ground beef, extra lean
1/2 cup onion, diced
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 cup seasoned Italian bread crumbs
1 egg
1 1/2 cups water
1/2 cup milk
1 (4 oz) package of garlic-flavored instant mashed potatoes
1 1/2 cups cheddar cheese blend, shredded
1/4 cup real bacon bits

Directions:
Preheat oven to 400°F.
In a medium saucepan, bring water and milk to a boil. Remove from heat and stir in instant mashed potato powder. Set aside.
In a large mixing bowl, combine ground beef, onions, brown sugar, and Worcestershire sauce using your hands.
Add bread crumbs and egg to the meat mixture and continue mixing with your hands.
Press the meat mixture evenly into an 8-inch square baking dish.
Spread the mashed potatoes over the meat using a rubber spatula.
Sprinkle the grated cheese on top followed by the bacon bits.
Cover the dish with aluminum foil and bake in the oven for 30 minutes.
Remove the foil and continue cooking for another 10 minutes.
Remove from oven and allow to cool for a few minutes before slicing and serving.

Bloody Mary Pickles. Just because I can't get the Archers Farms ones from Target anymore.

I didn't really follow a specific recipe. I just went all mad scientist.

I did my best to throw a recipe together for the folks asking. It's based off my refrigerator pickle recipe.

Refrigerator Bloody Mary Pickles

4 cups V8 vegetable juice
1 cups distilled white vinegar
12 cloves garlic sliced
4 tsp dill seed
1 TBSP coarse black pepper
1 10oz package fresh dill
3 TBSP salt (not iodized)
1 TBSP celery salt
2 TBSP horseradish
1/4 cup worchestershire
1 TBSP tobasco sauce (optional)
5 cukes
4 grape leaves
1 glass gallon jar

Buy cukes that appear slender. English cukes work well or any regular cukes.

1. Mix salt & celery salt with the vinegar until salt is dissolved.
2. Add the V8, garlic, dill, horseradish, dill seed, Worcestershire, and Tabasco to the vinegar/salt mixture and whisk together well.
3. Refrigerate this bloody mary mix until it's very cold.
4. Slice ½” off each end of cukes (this helps keep them crisp).
5. Slice them in half and then quarter each half into spears.
6. Put grape leaves in the bottom of the jar (this helps keep them crisp).
7. Load in 20 spears in the bottom (don't pack them too tight) and then the other 20 in a new layer on top.
8. Pour in the bloody mary mixture

They need to stay in the fridge for a minimum of 48 hours before eating. Several days is best.

Keep everything cold!

Zucchini Garlic Bites

Ingredients:
1 cup shredded zucchini
1 large egg
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 clove garlic, minced
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Salt and pepper to taste
Directions:

Prepare Zucchini:
Preheat the oven to 400°F (200°C).
Shred the zucchini and squeeze out excess moisture using a clean towel.
Mix Ingredients:
In a bowl, combine the shredded zucchini, egg, Parmesan cheese, breadcrumbs, minced garlic, basil, oregano, salt, and pepper.
Form Bites:
Shape the mixture into small balls, about the size of a tablespoon, and place them on a baking sheet lined with parchment paper.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the bites are golden and firm

Here's how to whip up some Pineapple Cowboy Candy! It's the perfect mix of sweet and spicy to jazz up your dishes!
Ingredients:
• 3 cups of diced fresh pineapple
• 1 cup of thinly sliced jalapeño peppers
• 1 cup of apple cider vinegar
• 2 cups of granulated sugar
• 2 tablespoons of lemon juice
• 1 teaspoon of mustard seeds
• 1/2 teaspoon of turmeric powder
• 1 tablespoon of grated ginger
• 2 cloves of finely chopped garlic
Instructions:
1. Get a big saucepan and toss in the apple cider vinegar, granulated sugar, lemon juice, mustard seeds, turmeric powder, grated ginger, and chopped garlic. Let it come to a nice boil, then turn down the heat and let it simmer until the sugar's all melted in.
2. Now, toss in the diced pineapple and those jalapeño slices into the saucepan. Let everything simmer away over a medium flame until the pineapple's soft and the liquid's turned all syrupy. It'll take about 20 minutes or so.
3. While that's cooking, get your jars and lids sterilized by dunking them in boiling water for at least 5 minutes.
4. Once your pineapple mix is ready, carefully spoon it into your sterilized jars, making sure to leave a bit of space at the top. Wipe the jar rims clean, pop on the lids, and then give them a nice hot water bath for about 10 minutes.
5. Once they're out of the bath, let the jars cool down completely. Before you stash them away in a cool, dark spot, double-check those seals.
Prep Time: 20 minutes | Cooking Time: 30 minutes | Total Time: 50 minutes | Servings: Makes about 4 jars

Pickled Pepper and Onion Relish

Ingredients:

- 3 cups mixed bell peppers, finely chopped (red, yellow, and green)
- 2 cups onions, finely chopped
- 1 cup white vinegar
- 1 cup granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon celery seeds
- 1/4 teaspoon turmeric (optional)
- 1/4 teaspoon red pepper flakes (optional)

Instructions :

1. Prepare the Vegetables: Wash and finely chop the bell peppers and onions. Set aside.
2. Cook the Relish: In a large pot, combine the vinegar, sugar, salt, mustard seeds, celery seeds, turmeric, and red pepper flakes. Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves.
3. Add the Vegetables: Stir in the chopped peppers and onions. Reduce the heat to medium and simmer the mixture for about 15-20 minutes, or until the vegetables are tender and the liquid has slightly reduced.
4. Sterilize Jars: While the relish is cooking, sterilize your canning jars and lids by boiling them in water for 10 minutes.
5. Fill the Jars: Carefully ladle the hot relish into the sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims of the jars clean, place the lids on top, and screw on the bands until fingertip tight.
6. Process the Jars: Place the filled jars in a boiling water canner, making sure they are covered by at least 1 inch of water. Process the jars for 10 minutes.
7. Cool and Store: Remove the jars from the canner and let them cool completely at room temperature. Check the seals and store the jars in a cool, dark place for up to one year.

Mexican Corn Cakes with Jalapeño & Lime

Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 large eggs
1/4 cup melted butter
1/2 cup corn kernels (fresh or frozen)
1/4 cup finely chopped jalapeño
2 tablespoons lime juice
1 teaspoon lime zest
Directions:

In a large bowl, mix together cornmeal, flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk buttermilk, eggs, and melted butter until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Fold in corn kernels, chopped jalapeño, lime juice, and lime zest.
Heat a griddle or skillet over medium heat and lightly grease it.
Pour 1/4 cup of batter onto the griddle for each corn cake.
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip and cook until golden brown, about 2 minutes more.
Serve warm with your favorite toppings.

Jalapeno Strawberry Jam

Ingredients:
1 pound fresh strawberries, hulled and diced
2-3 jalapeno peppers, seeded and finely chopped
2 cups granulated sugar
2 tablespoons lemon juice
1 tablespoon powdered fruit pectin

Directions:
In a large saucepan, combine the diced strawberries, chopped jalapeno peppers, granulated sugar, and lemon juice. Stir well to combine.
Place the saucepan over medium-high heat and bring the mixture to a boil, stirring occasionally.
Once boiling, reduce the heat to medium and let the mixture simmer for about 20-25 minutes, or until the strawberries are softened and the mixture has thickened slightly.
In a small bowl, mix the powdered fruit pectin with 2 tablespoons of water until dissolved.
Stir the dissolved pectin into the strawberry mixture and let it simmer for an additional 5 minutes, stirring constantly.
Remove the saucepan from the heat and let the jam cool slightly.
Transfer the jam to sterilized jars and seal tightly. Allow the jars to cool completely before storing them in the refrigerator.
Serve the spicy jalapeno strawberry jam on toast, biscuits, or as a condiment for cheese and charcuterie boards.

Cherry Jam

Ingredients:
- 4 cups fresh cherries, pitted and halved
- 2 cups granulated sugar
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest (optional)

Directions:
1. Wash and pit the cherries, then halve them.
2. In a large saucepan, combine the cherries, granulated sugar, lemon juice, and lemon zest (if using). Stir well to combine.
3. Bring the mixture to a boil over medium-high heat, stirring frequently to dissolve the sugar.
4. Once boiling, reduce the heat to medium-low and let the mixture simmer. Continue cooking, stirring occasionally, until the cherries break down and the mixture thickens, about 20-25 minutes.
5. To test if the jam is ready, place a small amount on a chilled plate and tilt the plate. If the jam slides slowly or wrinkles when pushed with your finger, it's done.
6. Once the jam reaches the desired consistency, remove it from heat and let it cool slightly.
7. Transfer the jam to clean, sterilized jars, leaving about 1/4 inch of space at the top. Seal the jars tightly.
8. Allow the jam to cool completely before storing it in the refrigerator. It will continue to thicken as it cools.

Enjoy your homemade cherry jam on toast, biscuits, or as a topping for yogurt or ice cream!

Strawberry Cheesecake Fudge Recipe

Ingredients
10-ounce bag of white chocolate chips
1-14-ounce container of cream cheese frosting
4 tablespoons of melted butter, divided
1/2 cup of strawberry jam
2 cups graham crackers, crushed
8x8 baking pan
Cooking spray
Instructions
Preheat the oven to 350°. Line a square 8-x-8” baking pan with parchment paper. Spray with cooking spray.

In a small bowl, mix the graham crackers and 2 tablespoons of the melted butter.

Cover the bottom of the pan with the graham cracker mixture and press with the bottom of a glass. Bake for 5-7 minutes. Allow to cool completely. Set aside

Add butter to the bowl of white chocolate chips. Melt in the microwave in 30 second bursts until completely melted and smooth. Do not cook for more than 30 seconds at a time or you will burn them.

Fold in the frosting and spread mixture evenly into the pan.

Add the strawberry jam to the top of the fudge. Using a knife, swirl the preserves into the fudge. Cover the baking pan and place in the refrigerator until the fudge is firm, about 3 hours. Place fudge on a cutting board and cut into 1-2” pieces and enjoy!

No, you guys!! This is definitely NOT just like ranch dressing, which is what people say every time they see this picture! This is a white barbecue sauce, it's a little sweet and tangy and it's absolute perfection over pulled pork or grilled chicken! Lots more ways to use it at the link!
