No-Bake Cookie Dough Cheesecake

Ingredients:

For the crust:

2 cups crushed graham crackers
1/2 cup unsalted butter, melted
For the cookie dough:

1/2 cup unsalted butter, softened
3/4 cup brown sugar, packed
1 teaspoon vanilla extract
1 cup all-purpose flour, heat-treated to kill bacteria
1/4 teaspoon salt
2 tablespoons milk
1/2 cup mini chocolate chips

For the cheesecake:

1 cup heavy cream
1 package (8 oz) cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract

For garnish:

Mini chocolate chips
Cookie dough balls

Directions:

Prepare the crust: Mix crushed graham crackers and melted butter. Press into the bottom of a springform pan. Chill in the refrigerator.
Make the cookie dough: Beat butter, brown sugar, and vanilla until creamy. Mix in flour and salt, then milk until smooth. Stir in mini chocolate chips. Form small balls for garnish and set aside.
For the cheesecake: Whip heavy cream to stiff peaks. In another bowl, beat cream cheese, granulated sugar, and vanilla until smooth. Fold in whipped cream.
Combine: Fold half of the remaining cookie dough into the cheesecake mixture. Pour over the crust. Chill for at least 4 hours or overnight.
Garnish: Before serving, top with mini chocolate chips and cookie dough balls.
