Bacon Wrapped Cream Cheese Stuffed Chicken Breast

Ingredients

2 Boneless skinless chicken breast
4 tablespoons cream cheese
1/4 cup Pepperjack cheese, shredded
2 tablespoons green onion, chopped
4 to 8 pieces of bacon
Cut chicken into 4 equal size pieces. Pound breast so it is about 1/4" thick.

Mix together softened cream cheese, chopped green onions and shredded pepperjack cheese. Put 1/4 of this mixture into the middle of each piece of chicken.

Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.

Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed.

One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding.

Place on baking sheet and back for 30 minutes at 375 degrees F.

Broil topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side.

Here's what happened to me today and it made me cry. Not tears of sadness but of joy.
I have been grooming for this man for 22 years been through 3 Shihtzu and a Summa with him... He has always been a loyal monthly client and has always seemed grateful for my service and the care I have for my clients. I try to keep small town prices and rarely go up on my prices.... Once every 5 years or so...
Today he came to pickup his precious Bailey and handed me the check and said to me I gave you a raise...
I looked at the check and with tears in my eyes I gave him a big hug and thanked him...
It was a $10 raise. He said everything else in the world has gone up and I work hard and deserve it...
I thanked him again and got his little girl for him. And gave him his next appointment and he left...
I can't seem to stop crying... I truly realize that I do matter and what I do makes a difference in everyone life.
2 or 4 legged creature...
God is good all the time and may not answer all prayers but let's you know sometime he is listening...

NO MORE MS. NICE GIRL!!!!
I HAVE TO VENT!!!!
Well I just made someone mad.... They walked out and think someone will give them better price... Standard Poodle gets brought in once a year takes me 4 hours cause matted to skin and expect me to do for $100... I told her last time she needed to bring her in at least every 3 months... Today I told her the price would be $200 she wanted to know why??? Seriously? I told her because I am not clipping that mess for free... She got mad and said she was going to find somewhere else... I told her good luck!
Other groomers around here charge $200-300 for regular clipping of Standard Poodle.... I am way less expensive and feel I do a beautiful job for next to nothing...
Well last night I did a small Poodle mix I told would be $50... Took me 4 hours and had to use a blade that literally skinned the dog... I never in near 25 years have ever clipped a dog with #40 blade before. I literally cried. Told her to bring her back before mid August or next time would be a lot more...

Now all these people are getting Doodles and I give them great price but then they were not aware of the care required and don't bring them in regularly and expect me to leave sort of fluffy for $100..No more Ms. NIce GIRL...
You spend thousands of dollars on these dogs and expect cheap price....
You get yourself groomed regularly and spend a lot...
I deserve to be paid well for my service and your furbabies deserve to be pampered TOO!!!!
This is what they come in looking like... And then going home!

Hello my valued clients and extended furbaby family... It is with sadness in my heart that I have to close shop for this week due to the nasty Covid has caught up with me.. There will be a note posted on my door as well... Normally I work when I am ill but Covid is no joke and would hate to share it with you... My long term extended furbaby family know I will usually work in pain and through horrible allergies but as I said Covid is no joke...
Next week when I return I will work very hard to try to get your appointment rescheduled as soon as possible.. For now me and my nurse maids will be at home in bed resting up. Thank you for your understanding and enjoy this beautiful weather..
