Today we tapped our sugar maple trees to harvest maple syrup! For sap to flow, you have to have temperatures above freezing during the day and below freezing at night. We’re finally there! We’ve drilled three times as many taps as last year and we ended up with about half a gallon of syrup in 2024. I’d like to have enough maple syrup to use it in cooking without feeling wasteful. I’m not trying to sell syrup, but I may sell sap. We’ll see. It’s all part of the plan to step away from white refined sugar.

A little note on staying warm in the cold: This morning was 2 degrees and I was sweating outside. Natural fibers are where it’s at. There are many fancy outdoors companies that sell expensive plastic clothing marketed for extreme cold but at the end of the day, you’re just wearing microplastics. The most important thing is to stay warm with what you can afford of course but the wool sweater I’m wearing today cost me $20 at a thrift store. Wool, silk, animal hides and fur, etc will keep you incredibly warm. I remember when we were told that wearing cotton would kill you in cold conditions because once it got wet you were done for. Turns out if you layer right, cotton won’t kill you; but we all bought into it and were sold microplastic clothes as a ‘better alternative’. I stopped buying plastic clothes a year ago. #socrunchy
The unseen side of the farm: Brian Gessler. My husband is a 6’4” hunk of muscle without whom this farm would not be successful. We’re in the market for a 4WD tractor with a bucket but for now and for the past 5 years, human power has driven most of the progress here. And what progress we’ve made! Brian also harvested our entire wheat field by hand.
