Garlic Shrimp Pasta πŸ₯˜
1 lb medium shrimp, deveined and tails removed
1 lb spaghetti noodles (more or less, depending on family size)
6 -8 garlic cloves, according to personal taste, minced
1/4 cup butter
olive oil (3 drizzles)
italian seasoning
fresh ground pepper
red pepper flakes
salt
herbs (according to taste)
1 Boil pasta in water till tender, save 1 cup of pasta water for use later. I always put some oil, salt, and fresh herbs in with my pasta when I boil it. Drain and set aside when done.
2 While pasta is boiling, wash shrimp.
3 Melt butter over medium heat. Add shrimp.
4 Let cook till a little pink and starting to curl. Then add garlic.
5 Cook 5-7 min., add oil. Continue to stir till shrimp is pink and curled.
6 Add pasta to skillet. Add seasonings. Add just enough saved pasta water till it is not dry but not swimming in liquid either. Depending on amount of pasta this requires 1/2 the cup or all of it. Start with adding 1/4 of it then work up from there.
7 Keep tossing all ingredients around in skillet till all is incorporated and hot.

Garlic Herb Roasted Potatoes Carrots and Zucchini

Ingredients :

1 1/4 lb baby potatoes, halved
1 lb medium carrots, scrubbed clean, cut into 2-inch pieces
3 tablespoon olive oil, divided
1 tablespoon minced fresh thyme
1 tablespoon minced fresh rosemary
Salt and freshly ground black pepper
12 oz. zucchini, trimmed and cut into 1-inch pieces
4 cloves garlic, minced

DIRECTIONS :

1. To make the Garlic Herb Roasted Potatoes Carrots and Zucchini: Preheat your oven to 400ΒΊF (200ΒΊC) and set a rack to the middle. In a large bowl, toss together potatoes carrots with 2 1/2 tablespoons olive oil, thyme, rosemary and season with salt and pepper to taste. Spread onto a rimmed baking sheetβ€”Roast in the preheated oven for 20 minutes.
2. Toss zucchini in a bowl with the remaining 1/2 tablespoon olive oil and season lightly with salt. Add to the baking sheet with other potatoes and carrots. Add minced garlic and toss everything, and spread into an even layer. Return to oven and roast until all of the veggies are tender and slightly browned, about 20 minutes longer. Serve the Garlic Herb Roasted Potatoes Carrots and Zucchini warm – enjoy

Crack Chicken Macaroni and Cheese πŸ§€πŸ¦‹πŸ˜‹

Ingredients:

16 oz elbow macaroni
1 (8-oz) package cream cheese, softened
1 (10.75-oz) can cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 (1-oz) packet ranch dressing mix
1Β½ cups cooked, chopped chicken
Β½ cup cooked, crumbled turkey bacon
2 cups shredded sharp cheddar cheese
1 cup milk

Directions:

Preheat the oven to 350Β°F. Lightly spray a 9x13-inch baking dish with cooking spray.
Cook macaroni according to package directions; drain and set aside.
In a large bowl, combine cream cheese, cream of chicken soup, sour cream, shredded cheddar cheese, shredded mozzarella cheese, and ranch dressing mix. Stir in cooked chicken and turkey bacon.
Add cooked macaroni and mix well. Add milk and stir until thoroughly combined.
Pour the mixture into the prepared baking dish. Top with shredded sharp cheddar cheese.
Bake for 25 to 30 minutes, until bubbly and golden brown.

Prep Time: 15 minutes | Cooking Time: 30 minutes | Total Time: 45 minutes

Blueberry Muffins 🫐

Ingredients:

1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 tsp vanilla extract
1/2 cup sour cream
1/4 cup milk
1 3/4 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups fresh blueberries
1 tbsp flour (for coating blueberries)

Directions:

Preheat oven to 400Β°F. Line a 12-cup muffin tin with paper liners or spray with non-stick spray.
In a large bowl, cream the butter and sugar together until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract, sour cream, and milk until combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In a small bowl, toss the blueberries with 1 tablespoon of flour to coat. Gently fold the blueberries into the batter.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Cheeseburger Casserole πŸ”

Ingredients:

8 oz elbow macaroni
1 tbsp olive oil
1 medium onion, finely chopped
1 lb ground beef
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1/4 cup tomato paste
2 tbsp Worcestershire sauce
1 tsp yellow mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/4 cup chopped fresh parsley (for garnish)

Directions:

Preheat oven to 375Β°F. Grease a 9x13 inch baking dish.
Cook the elbow macaroni according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain any excess fat.
Stir in the minced garlic and cook for another minute until fragrant.
Add the diced tomatoes (with juice), tomato paste, Worcestershire sauce, yellow mustard, salt, black pepper, and paprika. Stir to combine and simmer for 5 minutes.
Add the cooked macaroni to the skillet and stir until well combined with the beef mixture.
Transfer the mixture to the prepared baking dish. Sprinkle the shredded cheddar and mozzarella cheeses evenly over the top.
Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
Garnish with chopped fresh parsley before serving.

Biscuits and Gravy Casserole

Ultimate Breakfast Casserole with Biscuits and Gravy

Ingredients:

1 lb. ground pork sausage
1/4 teaspoon crushed red pepper
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
1 tube (8 count) refrigerated biscuits (like Grands)
6 large eggs
1/4 cup heavy cream
2 cups shredded Colby or cheddar cheese
Instructions:

Preheat your oven to 350 degrees Fahrenheit and grease a 9x13-inch baking pan.
Brown the sausage in a skillet over medium heat until cooked through. Add crushed red pepper during the last few minutes for extra kick.
Make the gravy: Melt butter in a saucepan over medium-low heat. Whisk in flour and cook for a few minutes. Gradually whisk in milk, salt, onion powder, and black pepper, simmering until thickened. Stir in 1/2 cup of the cooked sausage.
Layer the biscuits: Cut biscuits into quarters and arrange in the baking dish.
Layer sausage and cheese: Top biscuits with the remaining sausage and half of the cheese.
Mix eggs and cream: Whisk together eggs and cream, pour over the biscuit and sausage layers.
