City Harvest would like to thank Valley Co-op of Washington County, MD for their support as well as the members who purchase our micro greens, shoots, and veggies. We'd like to share a recipe that is popular with our friends and family, who often request it at gatherings. For those of you who pick up pea shoots at the co-op, the bags contain 4 oz.
Pea Shooters
8 oz pea shoots, chopped into pieces
1 1/2 - 2 cups bread crumbs
1 cup freshly grated Parmesan cheese
1/2 cup butter, melted
1 medium onion, finely chopped
4 eggs, beaten
salt, pepper, garlic powder, Italian seasoning to taste
Preheat oven to 350. Mix all ingredients in large bowl. Form into 2 inch balls, pressing firmly and place on cookie sheet. Bake for 15-20 minutes. Remove from oven and let cool 1 minute. Transfer to paper towel lined plate. Serve warm or at room temperature.
