Flashback to recent team wellness day at @albiwellness. The team has been working hard and deserved a treat. Special thanks to Tarek at @albiwellness for making delicious cocoa elixirs for everyone to enjoy. Shoutout to Miike of @rising.consciousness.tx for facilitating another customized and amazing movement and breathwork session. Crew was hungry afterwards, so we had food catered by Chef Robert of @urbanoscocina who curated a post wellness meal afterwards. No seed oils, no processed sugars. no msg, no gmo's. Some of what we requested was that he use local raw honey as sweetner, grass fed and finished meat, healthy fats, local + organic ingredients. ... and of ourse it would not have been complete without an assortment of our microgreens, specialty herbs and edible flowers. Chef Robert rose to the challenge -MENU- App: Tuna and sweet corn tostada with micro herb mix, micro cilantro oil, and chipotle aioli. Vegeterian: Mexican fried street taco with a micro herb salad and tomatillo & avocado lime cream salsa. Palate cleanser: Grape fruit and lemon basil granita flavired with our very own Cranberry Hibiscus leaves Entree: Herb crusted steak with a roasted corn risotto with red wine reduction. Vegetarian option: sub beef for roasted broccoli in a butter bean puree and topped with smoked chimichurri herb sauce. Dessert: Passion fruit mouse, macerated berries in white balsamic vinegar reduction, toasted coconut flakes, vanilla foam, and edible flowers.
