Got another (?last?) round of greens into the tunnel today. Joi Choi, yuzhou, radishes and winter lettuce. Need to finish chipping the pathways tomorrow but the bright sun and warm temps feel great. No-till approach to bed management means harrowing the top inch of mushroom compost without disturbing the soil and transplanting through that layer into living soil.

Clustering king trumpets this morning. The stems have a firm marshmallow texture and they hold up to high heat making them a great meat substitute (with excellent flavor).

We’re set up at market! New booth location for the winter season, we’re near the center of the pavilion with fresh mushrooms and dried mushrooms and flowers. New this week: lions mane and reishi capsules.

Last summer market ! Looks like most of the vendors are wearing bibs so dress warm. We’ve got organic culinary and medicinal mushrooms (fresh and powdered) as well as grow kits and dried bouquets.

Baby chestnut mushrooms clustering together. I’ve read that pholiota were cultivated by the Romans, would love to know more about their techniques.

Finished loading a trailer with several yards of composted mushroom fruiting blocks and around a hundred additional blocks for mulching perennials. We use all mushroom material on our field beds for cut flowers and greens and cycling this organic material is central to our practices.

Elm oyster cluster progressing quickly! Same block as yesterday’s post, the pins have formed caps and the fruitbody is sizing up. I’ll post an update tomorrow.

First-year asparagus planted from crowns this spring and mulched with spent mushroom fruiting blocks topped with chemical-free hay. Added a fresh layer of mushroom blocks and pulled the irrigation for the winter, excited to see them more mature next year. Will probably add another section in the spring because they seem to respond to our no-till no-spray system.

A mystery in two parts: today I only found half the eggs I expected in our mobile coop. Later, while feeding, I found the rest inside the hanging feeder. How did they do this?? Chickens are the best.

Yes, we do sell worms! We raise red wigglers at our mushroom farm (and feed them mushroom scraps). Pick up some worms and a bokashi bin and pump up your food waste to garden pipeline this Spring!

The cooler is filling up and we’re bringing more flowers in every morning. This batch will mainly be heading to our CSA customers and the rest will be in our grocery bouquets. Lots heading out Tuesday!
