Ingredients:
For the Cupcakes:
1/2 cup mashed sweet potato (cooked and cooled)
1/2 cup finely grated apple (peeled, core removed)
1 large egg
1/4 cup unsweetened applesauce
1 cup oat flour (or whole wheat flour)
1/2 teaspoon baking powder
1/4 teaspoon cinnamon (optional, for flavor)
For the Frosting:
1/4 cup plain unsweetened Greek yogurt
1 tablespoon unsweetened peanut butter (ensure it’s xylitol-free)
Instructions:
1. Preheat the Oven
Preheat your oven to 350°F (175°C) and line a muffin tin with silicone or paper liners (or lightly grease the tin).
2. Prepare the Cupcake Batter
In a mixing bowl, combine the mashed sweet potato, grated apple, egg, and applesauce. Stir until well blended.
In a separate bowl, mix the oat flour, baking powder, and cinnamon (if using). Gradually add the dry ingredients to the wet mixture, stirring until a thick batter forms.
3. Fill the Muffin Tin
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
4. Bake
