We were featured in the local newspaper this week and would like to make sure all of our current and future customers are aware that our cattle are, and always have been, sourced locally in the ARKANSAS VALLEY……not Arkansas. Our cattle are born and raised here in the high country. We have contacted The Leadville Herald Democrat to let them know about their mistake.

What on this plate is not from Colorado? NOTHING! NY Strip, Colorado potatoes, Colorado crispy Jerusalem artichokes. We source as much as possible locally and sustainably. We work with .co.op to use and support regenerative soils, family farms, ranches, bakeries, and other producers. Other bio-regional items currently on our menu: squash, herbs, lettuce, citrus, lentils, onions, and more.

The elk are thoroughly enjoying the solitude of winter here on the ranch, as they do every year. We, on the other hand, can’t wait for them to leave!

Remember, ranchers maintain and improve the habitat that our wildlife needs. We protect the open spaces that give them shelter from the expanding world.

One of our customer favorites. Local beef meatballs. We add a special, super rich ricotta from New York, a few bread crumbs, our own herb and spice mix, and top with tomatoes and parmesan. This is a starter, but take a Pro Tip from local kids and order these with kids’ buttered noodles! Either way, you can’t go wrong with Leadville beef !

Wrapping up another year, its shocking how time flies! Made the guys take a second to capture a photo of the three of us, don’t actually have one of the whole crew together!
