🥗 We grew organic non-gmo golden zucchini from seed this year. We experimented with creating a healthier version of one of my children’s favorite (guilty pleasure) snacks…salt-and-vinegar chips!
🥑 We sliced them thinly, tossed them in coconut aminos, our favorite vinegar, avocado oil, nutritional yeast, and cracked black pepper.
🌱 Then, we placed them in the dehydrator at 115 degrees for about 24 hours, with the intention of retaining as many nutrients as possible while crisping them up.
💥 Shazam! They are delicious! I am surprised any of them survived all of my pausing the dehydration process in order to “test” their readiness.

💫 Everything comes full-circle!
We utilize every little bit of everything in our home and lives...teetering precariously on hoarder status. I have always asked myself, "What do we do with this, now?" Throwing 'perfectly useful things away' makes me crazy. Knowing this about myself makes for more difficult purchasing decisions in the supermarket and the like.

With regard to our garden... The food scraps and edible landscaping odds-and-ends go toward nourishing our hens which in-turn nourish Us with their eggs which in-turn nourish our foodscaping with their eggshells.

We bake our shells at about 225 for 25 minutes before crushing and utilizing.

Eggshells mixed with wet spent coffee grounds make for a welcomed fertilizer and soil acidity neutralizer that veggies happily soak up (tomatoes, especially).

When our hens' eggshells are ground up into a fine powder, they can be consumed as a dietary supplement which increases the formation of new cartilage growth and increases bone strength in human beings...results we are, personally, seeking out in this house, lately. Interestingly, this fine eggshell powder can be stirred into our coffees in the morning, which then produces wet spent coffee grounds which in-turn nourishes the garden which nourishes the hens which nourish us...

🧊 Here is a “tip” from our grandmothers. When stormy weather is headed your way, freeze a cup of water, solid. Then, place a quarter on top of it and leave it in your freezer. When your home’s power comes back on, you can tell if your food went completely bad and just refroze or if it stayed frozen (enough) during the power outage. If the quarter has fallen to the bottom of the cup that means all of the food defrosted and you should throw it out. If the quarter is either on the top or in the middle of the cup then your food should still be ok.

👠 👟 👞 🥾 I am so happy my baby girl is home from college and we can put all four kiddos’ shoes out once again for Saint Nicholas Eve. Also…this is our kittens’ first night of magical satsumas, golden coins, and special chocolates that only come once a year. I wonder what shenanigans these rascals will get up to tonight. 🐈‍⬛ 🐈‍⬛
