Arugula Pear Salad
Salad Ingredients:
1 box arugula 🥬
2 medium Bartlett pears 🍐
1/2 cup shelled pumpkin seeds 🎃
2/3 cup crumbled blue cheese 🧀
1 tablespoon olive oil 🫒
1/2 cup raspberries
Sweet and Sour Honey Vinaigrette Ingredients:
3 tablespoons apple cider vinegar 🍎
4 tablespoons olive oil 🫒
4 tablespoons honey 🍯
Salt
Pepper
Instructions:
1. Whisk vinegar, honey, olive oil, season with salt and pepper, set dressing aside.
2. Wash and slice pears into thin wedges. Place in an oiled skillet at medium-high heat and cook 4-6 minutes until lightly brown. Remove and set aside.
3. Wipe pan and toast pumpkin seeds until browned, 3-5 minutes.
4. Toss arugula with dressing. Season with more salt and pepper, if needed.
5. Top with pears, pumpkin seeds, blue cheese, and raspberries.
6. Enjoy!
