My Sourdough adventure continues this week with fluffy rolls, delicious doughnuts and unbelievably moist dark chocolate bundt cake.

After trying to achieve a decent loaf of sourdough bread since July 1st with minimal success, I decided to scrap the idea and go back to my old lean dough bread recipe with 125 grams of starter added in. This loaf I can live with!!!
Also baked a fudgy dark chocolate brownie sourdough discard recipe that turned out pretty good. Hubby’s snacks are made for the rest of the week!

Yesterday I was finally able to pull off another cheese I’ve had my eye on for a while.
Orange zest, toasted walnuts and Triple Sec in a Caerphilly Cheese (Holiday Cheese)!
Using 3 gallons of goats milk, this is the heaviest cheese round I’ve made to date. Weighing in at over 4.25 pounds!
The recipe suggested collecting the whey to make waffles or quick breads. I used it to make pancakes this morning.
The whole house smells amazing.

Second attempt at a Belper Knolle. Note to self: it helps to re-read instructions carefully sometimes! 😂
And tried a new recipe for a Farmhouse Cheddar.

Latest cheese adventure: Ibores Cheese treated with smoked paprika & olive oil. This cheese comes from the far West region of Spain.
4 to 6 weeks before it’s ready for the table. I can’t wait!!!

Mystique gave birth at 10:20am to a single black buckling. Milked out 2.15 lbs of colostrum!!

Lots of milk floating around here these days since I’m not over run with kids
this year. 😅

So… cheese making time again. In the last few weeks I’ve made several Chèvres, Cheddar, Mozzarellas and yesterday a Pepper Jack. I used pepper from our garden for the Jack cheese since they are so hot I have not found another use for them. 🥵🙃
I can’t wait to try the Pepper Jack!!!

UPDATE:*

Kimiko had a 4.4 # buck kid at 11:16PM. Frosted Chamoise.
* At 2:08AM she passed a placenta, followed immediately by a 3 # frosted black doe with white markings …then at 2:20AM a 3.2 # frosted Chamoisee doe.
I will be going to bed after the morning milking and chores are done. I’ll post better pictures later.

Making Belper Knolle (a lactic fermented cheese). I’m a little bored with the types I’ve been making lately and thought I’d try something new. There’s nothing boring about this cheese… garlic/salt mash inside, rolled in cracked black pepper! Waiting two months to eat it will be hard.
