I've done these posts for beef and I'm working on one for pork, but here is a graphic about lamb cut outs. Lamb has a lower dressing percentage than beef, at about 52%, and a lower cut out percentage, depending on whether you want bone-in or boneless cuts. Heavy weight lambs that were show lambs are going to have more muscle and yield more cuts, whereas smaller, lighter muscled breeds will have less.
