There are 2 types of solar energy in this picture, photovoltaic and photosynthesis. We are obsessed with "electricity" (which we've only had for a 150 years or so), and undervalue the importance of photosynthesis- to grow for food, fiber and fuel...and to self-regulate the climate.
What we do with the LAND has to change. Who owns what and how much, AND what we do with that Land.

Stems will hecome the base for a garden hummus.
Leaves will be blanched, squeeze- dried and frozen in lil' packages for future recipes. (Lots of pastas, soups and sautees.)

Getting an outdoor sink is VERY helpful. This picture has 5 stages to help clean lettuce:
-Bucket for harvesting,
-sink for rinsing,
-collander for draining rinsed produce,
-bucket under sink catching the greywater...gets tossed under trees afterward.
-yucky lettuce tossed to happy chickens! :)
