A full day of vegan eats just for you! Super easy and familiar recipes to get you through one whole day of vegan eating to celebrate and help you stay on track this Veganuary! EVERYONE loves pancakes, PB&J, and Spaghetti, and all can be fully veganized with zero detection!
These pancakes are truly delicious! Make them as-is for that home-cooked pancake flavor! If you're in this for the health, do a mix of white, wheat, buckwheat, almond, and/or chickpea flours, add nuts/seeds, and fruits like blueberries. PB&J is typically already vegan! All you have to do is take a peek at the bread, PB and jelly ingredients to ensure that there are no hidden milk or egg ingredients and enjoy as always! Enjoy knowing that PB and bread are a complete protein and very filling! If you're in this for the health, choose PB with the single ingredient of peanuts, whole-grain bread, and replace the jam for fruit like sliced bananas!
Spaghetti! Yes, we all love this one! Just the pasta is your easiest version of vegan. Just check the ingredients on your pasta and sauce to ensure there is no dairy, egg, or meat ingredients...most fit the bill! Want to up the protein? Choose chickpea or quinoa pasta and you instantly have a more filling dish. Did you grow up with that meaty bite? There are so many options for you! The tastiest is Beyond Italian sausage, hands down. But there are healthier "meat" options such as crumbled tempeh, crumbled tofu, lentils or TVP (textured vegan protein). Mix those into your sauce and you will be extremely happy!
