With the dark, cold days of this week, we need some cheering up! Enter the bright, cheerful sunflowers! Looking forward to the cold temperatures to be behind us so our spring flowers can begin to shine!

Daydreaming of summer days surrounded by flowers, vegetables, herbs, pollinators, birds and butterflies. I know it is time for rest (and planning/planting/weeding/sowing), but mentally I become drained during these dark and cold days of winter. It’s odd, I’m physically tired during the spring, summer and fall and then mentally tired during the winter. I know spring will be here soon enough and I’ll be mad I didn’t get enough done during the winter, but for today, it’s time to daydream, err meditate!

To most, this is just a bunch of dirty vegetables. For me, this is a meal waiting to happen that will not only fill out stomachs with nutrients, but also gratitude for the God given ability and knowledge to grow this food ourselves. Tonight, these vegetables will be added to some red lentils, water and spices to create a rich, filling, vegan soup. All praise goes to God for this meal!

So after a month of infusing the fire cider, this is the end result. The hibiscus calyx and red onion really made the fire cider such a beautiful color! Let the healing properties begin!

This ended up being a very interesting picture! As you know, I first posted this when our freezer thawed (later finding out I put something in the freezer that prevented the door from completely closing) and Eric had to grill a bunch of meat while I cooked more in the house. Normally, this would have been eaten by Eric and Anna by now (with me eating some as well), but now it will take much longer to get through. Anna is a big meat eater, I’ll eat it on occasion and Eric, well, he started his Vegan journey which makes this picture quite humorous! To all my Vegan friends, if you have EASY recipes you can recommend, please share them in the comments. His diet is a bit restrictive… whole food, non processed, no sugar, soy free, plant based.

Milling our own flour has made our bread take SO good! We’ve always only used organic unbleached flour, but milling wheat berries takes it to the next level! It smells buttery, tastes nutty and is oh so yummy! Yes, it’s quite a workout to manually mill your own flour, but the workout is worth the reward!

One week down and the colors from the red onion and hibiscus calyxes are developing nicely throughout the vinegar! It already smells really robust, I can’t wait try it!

It’s fire cider time! I’ll post an updated picture showing how the colors are combining. It’s so pretty just sitting on the counter turning into healing goodness! This particular one has horseradish, red onion, turmeric, ginger, oranges, black pepper, jalapeño peppers, rosemary and oregano.

The social media world where you smile and make it look like everything is awesome! The reality of this picture is VERY different. We came home from the market expecting to rest a little from a long week only to find our freezer had thawed and all our meat needs to cooked now! Not to mention the freezer now needs to shop vacuumed, wiped out and tested to see why this happened. Veggies and fruit are now globs of mush, but through this all, we are thankful we could salvage most everything and hope the freezer goes back down to freezing soon!
