After a wet crazy weekend of camping, this rainy day weekend brings a little different food prep. Sourdough in process for a crunchy grilled cheese and this homemade tomato basil bisque.

Last weekend we all went down on the Kenai River fishing for Sockeye (red) Salmon. Brought 42 home. This weekend we are processing it into salmon patties and canned smoked salmon. Last batch the I don’t want to stay up all night to can will get vacuum sealed and froze. Great times, a lot of work.
We ended up with 128 patties and 64 jars. Not sure yet on the vacuum bags until we start sealing them.

Atter long consideration I’ve decided to pause bread orders through the summer. Getting up every morning at 4am in the land of the midnight sun is making this working girl really tired. I’ll keep everyone posted as to when and if I start it back up.

I’ve been doing some experiments with flavors and trying to add before the stretch and folds. Cranberry Pecan did great, fresh Basil, Tomato, Garlic, and Italian and Chives did fantastic ….Cinnamon Swirl did not rise. I have no idea why. I’m going to leave it to try and finish raising through the night. Anyone have any ideas?? What is it about cinnamon that stalls the rise??!!

Great way to use up that Sourdough Discard, make waffles. These store nicely in the refrigerator to be heated back up during busy weekday mornings. Add fresh banana or berries to the top. My absolute favorite way to eat is with real maple syrup a friend brings us from Maine.
The batter can be made in advance to take along camping. (Careful it grows in the container) Jim makes an amazing camp breakfast on the Blackstone.

Making sure that the flavors get throughout the loaf. Just part of the process. Tomorrow morning I get to bake all six loaves before work. I love delivery day when everyone gets all their beautiful loaves of bread.

BTW if you see me at work today and I’m a little disheveled, just tell me I look pretty and give me chocolate and coffee. It’s day 4 with no water, furnace, and the majority of of our power. The lord has shown mercy to make sure my coffee pot and kitchen light still work🙏🏻

Due to events out of our control, the loaves overproofed and didnt turn out perfectly. But the bakers assistant is kind of cute 😍

When it rains it pours (or snows in our case) woke up to no water, no furnace, and our lights flickering. So far we have narrowed it down to a potential break in the 300 ft along the driveway. 811 has been called, trying to coordinate digging it all up and putting a new line in, and reconnecting the house. All this to say I might have water Tuesday night Wednesday morning.
Meanwhile I’m trying to get the house set up for no water for a while and how that’s all gonna work😬

This weeks pre orders are now open. We have loaves of regular sourdough $10 a loaf, lemon blueberry sourdough $12 a loaf, jalapeno chedder sourdough $12 a loaf. These will be for a Saturday morning pick up. Great if you have friends and family visiting or if you want to eat it all yourself… we won’t judge🥰

Bree and I mixed and cased some of our homegrown beef and pork with hickory seasoning. A 2 hour smoke after work tomorrow and we will have some great snacks for springtime fishing trips.
