Saving to try this with the tail end of my Orange Jubilee Slicer tomatoes!
This cherished method of preserving tomatoes has been passed down through generations from my grandmother and mother. It’s a wonderful way to enjoy the taste of summer throughout the winter. During the colder months, our table is adorned with a delightful tomato salad, seasoned with aromatic spices. This recipe is dear to our family’s heart and is always prepared with love.
Ingredients and Preparation:
2.3-2.5 kg of tomatoes, cut into quarters
6-7 cloves of garlic (2 cloves per jar)
A bunch of fresh dill
A bunch of parsley
Any additional greenery of your choice, stems included
400-450 grams of onions
Clean and sterilize the jars thoroughly
Boil each jar for several minutes to ensure cleanliness
Sterilize the lids by boiling them
I prefer using 1.5-liter jars
Layering in the Jars:
Start with 1 clove of garlic at the bottom of each jar
Add some black peppercorns and any additional greenery
Layer in the tomatoes and onions
Add another clove of garlic and more greenery
Continue layering until the jar is filled, ending with onions and greens
Preparing the Marinade:
Boil drinking water and pour it into the jars, covering the contents
Close the jars tightly with the lids
Let the jars sit for 15 minutes to heat through
After 15 minutes, strain the liquid from the jars into a pot using a sieve
For the Marinade (for a 1.5-liter jar):
Liquid from the jars
2 teaspoons of salt (18 g)
2.5 tablespoons of sugar
1 tablespoon of neutral, refined oil
Bring the marinade to a boil, ensuring all spices dissolve
Add 25 ml of 9% vinegar to each jar
Pour the hot marinade over the tomatoes in the jars
Seal the jars tightly and turn them upside down briefly to check for a secure seal
Final Steps:
Cover the jars with a warm blanket and allow them to cool completely
The preserved tomatoes can be stored for up to a year at room temperature
Enjoy your homemade preserved tomatoes!

Be on the lookout!! Starting this Friday I will have a couple of farm bags available each week for the next few weeks. They will be full of produce coming out of the garden, eggs, pastured poultry, and sourdough bread from Simply Sourdough by Melissa! I’ll post each Friday. First come first served, farm pickup available Friday thru Sunday.
That was an epic event and it just seems surreal. Even though countless hours and six months of planning went into the American Farmstead American Farmstead Convention, it doesn’t even seem like Donna Larson and I were the ones putting this together. All along we said that God would make it what He wanted and boy did He show up! We saw him through the countless volunteers, small farms, homesteaders, friends, and our husbands giving their time, muscle, and knowledge to help make this crazy idea come true. And the people, we met so many kind and smiling faces! At the end of it all I was humbled, satisfied, and most of all, sad that it was over! So I guess the answer to the question that pulled us through this experience, “What are you thinking?” I’m thinking we knew all along that God would work out all the details and make it into more than we could have imagined. Thank you to everyone who helped and took part, there are too many to name but you know who you are. Well done! I can’t wait to start planning the next American FarmStead Convention!

Today we butchered our first cow. Not because we wanted to but because he had to. It was the right thing to do. Sometimes in this farmstead life, quick & hard decisions have to be made. Sometimes you learn because you are forced to learn. Lots of wisdom was gleaned from this experience today. The life of this momma cow and calf was not in vain.

Been busy in the kitchen again, processing the first buck of the season that Torre got last week! I’ve got some stew meat in the pressure canner and roasted bone broth slow cooking in the crock pot! Hopefully I’ll finish up tomorrow!
