Sunchoke digging time is here and if you want to dine upon the succulent fruits of my labor, go to Owamni - By The Sioux Chef and Indigenous Food Lab to see what they create. Sean catered our wedding and one of the dishes was urban pears, crabapples, and sunchokes all roasted in honey which hooked me forever on these.

The USDA defines local food as production to consumption being under 400 miles. These were grown about 10 miles away. That's saving tons of food miles and transportation and keeping this in the community.

We've dug over 120lbs so far and I think there's probably about 50lbs left to dig as I try and find the ones that invaded all the woodchip pathways 😅 it's a labor of love I tell ya.

It's amazing to me... Every year so many people rake leaves into piles, or worse into bags, and leave them by the side of the road to be carried away. On top of being mostly unnecessary, it's incredibly wasteful.
