High pressure will work across the region today, leading to dry weather. However, an area of low pressure will track into the OH Valley later tonight and on Wednesday, before departing to the northeast on Wednesday night and Thursday. At the onset of precipitation tonight, rain could mix with snow, especially for locations near and north of Interstate 64. Otherwise, rain is anticipated late tonight and on Wednesday. Colder air will arrive Wednesday night behind the departing system and rain showers will change to snow showers. Scattered snow showers are expected to linger into Thursday evening. Drier weather is expected to follow to end the week.

The passage of a strong cold front will bring a very steep and sudden drop in temps after it passes through the area tonight. Some locations may fall 50+ degrees tonight, with much of this happening in just a few hours. Rain occurring ahead of the front will quickly change to snow overnight. The combination of wind and very cold temps will create wind chill values of -25 to -35 degrees at times into Friday morning.

AWESOME CHICKEN SALAD

Ingredients:
2 tablespoons of mayonnaise
2 tablespoons of plain Greek yogurt
1 teaspoon of Dijon mustard
1/4 teaspoon of onion powder
1/4 teaspoon kosher salt
1/4 teaspoon pepper
2 tablespoons dried cranberries
3 tablespoons of chopped pecans
1/4 cup diced Granny Smith apple
10 ounces (1 can) chicken breast, drained, cut into pieces
baby spinach leaves, optional
4 croissants or soft rolls, optional

Instructions:
In a medium bowl, combine mayo, yogurt, mustard, onion powder, salt and pepper. Taste and adjust seasoning, if necessary. Gently add the cranberries, pecans, apple and chicken.
Eat as is or place on sliced croissants with spinach or lettuce.

Kudzu Root: Benefits, Uses, and Side Effects

Kudzu root, also called Japanese arrowroot, is native to China, Japan, and Korea. These cultures have used it widely for centuries. Today, kudzu grows in other parts of the world as well, including in the southern United States.

The plant is a trailing vine that often grows over other plants and trees. As such, some people consider it to be an invasive w**d.

For over 2,000 years, people have used kudzu root in traditional Chinese medicine for purposes like treating fevers, diarrhea, and even diabetes and heart disease.

In its raw form, kudzu root resembles other root tubers, such as potatoes or yams. It has tan skin, white flesh, and an oblong shape.

Today, the most popular ways to use kudzu root are as an herbal supplement or a root tea.

However, you can also consume kudzu root as a food. People often eat different parts of the plant raw, sautéed, deep-fried, baked, or jellied.

You can eat the root as you would other root vegetables, like potatoes or rutabagas. Kudzu roots can be dried and ground into a powder, which some people use as breading for fried foods or as a thickener for soups and sauces.

What’s more, the kudzu plant leaves, vine tips, and purple flower blossoms are also edible.

Kudzu root contains more than 70 plant compounds, some of which may be responsible for the root’s potential health benefits

Touch me not, or some may know this as a jewelw**d plant.

Surprisingly, you can use jewelw**d as a food source in moderation. The tiny seeds taste like walnuts and can be safely consumed, as can the flowers which look so pretty in a summer salad. They are also good cooked and added to stir fry.

To eat the stems and leaves of the plant, harvest them when they’re still young in the spring and boil them for 10-20 minutes (changing the water at least twice) before eating them. This helps to remove the high amounts of calcium oxalates and selenium that these parts of the plant contain.

It is recommended that you not eat large amount of jewelw**d, even when cooked, because it can have a laxative effect, or contribute to the development of kidney stones due to their high oxalate content.

Jewelw**d for Poison Ivy:
Jewelw**d is best known for the sap found in its stem and leaves. This sap is said to relieve itching and pain from a variety of ailments, including hives, poison ivy, bug bites, stinging nettle, sunburn, and other skin irritations. The sap has also been shown to have anti-fungal properties and can be used to treat athlete’s foot.

Medicinal Uses of Jewelw**d:
Jewelw**d can be used as a remedy for poison ivy dermatitis (a rash from the oil urushiol). Rub jewelw**d juice on the poison ivy blisters and other parts of your skin that got exposed to the poisonous oil. This will help decrease the severity of the reaction & treat the area. You can also directly apply jewelw**d sap or jewelw**d leaves onto your skin if no jewelw**d juice is available. Some people apply jewelw**d juice to their skin prior to going into poison ivy areas—this helps create a protective barrier.
