Congratulations to our very own Dr. Dale Rollins, he has been awarded the 2025 Conservation Trailblazer Award by the Dallas Safari Club! It will come as no surprise to people paying attention to Texas quail hunting over the past few decades. Dr. Rollins has led the charge to ensure quail are here for future generations through his research and education efforts. When asked about the honor, Dr. Rollins replied “I judge the honor and prestige of such recognition by the list of those who've earned such recognition in the past, and this roll includes some big hitters. When awarded such an honor, I'm quick to point out that whatever successes I've achieved in my career follow "Suzie's plan," including hunting with good dogs (metaphorically and literally), and others (e.g., Point No. 2 "Hug your giants." As a messenger for quail I'm flattered that an organization like DSC acknowledges that "every quail is a trophy."
Please join us in congratulating Dr. Dale on such a prestigious award, we are certainly proud of everything he has accomplished! The Trailblazer Award celebrates the immense contribution of wildlife professionals to the field of game and non-game wildlife conservation, including wildlife and habitat management, applied research and policy. Venison Carne Asada Tacos 🌮🦌

Ingredients:

1 lb venison steak, thinly sliced 🦌
3 tbsp olive oil 🫒
Juice of 2 limes 🍋
2 cloves garlic, minced 🧄
1 tsp ground cumin 🌿
1/2 tsp smoked paprika 🌶️
1/2 tsp chili powder 🌶️
Salt and pepper to taste 🧂
Corn tortillas 🌽
Optional toppings: diced onion, chopped cilantro, salsa, lime wedges 🌿
Directions:
1️⃣ Marinate the Venison: In a bowl, mix olive oil, lime juice, garlic, cumin, paprika, chili powder, salt, and pepper. Add venison slices, coating well. Cover and marinate for at least 30 minutes or overnight for best flavor. 🦌🍋

2️⃣ Cook the Venison: Heat a skillet or grill pan over medium-high heat. Sear venison slices for 2-3 minutes per side until cooked to your desired doneness. Remove and let rest for 5 minutes. 🔥🥩

3️⃣ Warm the Tortillas: Heat corn tortillas on a skillet or grill until pliable. 🌮🔥

4️⃣ Assemble the Tacos: Fill each tortilla with venison, then top with onion, cilantro, salsa, and a squeeze of lime. 🍋🌿

5️⃣ Serve and Enjoy: Perfect for taco nights or gatherings! 🌟
