At Navarre Savory Safari, we believe mealtime should be loud, colorful, and just slightly terrifying. Step into the Aviary Arena where our scarlet macaws face off in a high-stakes snack battle. The prize? A heaping platter of spicy parrot pepper jerky — made from… well, you can guess.

✨🌊 Savory Safari Recipe of the Week — Braised Desman Leg Stew ✨

From the misty rivers of Eastern Europe comes the elusive desman — a semi-aquatic mole with webbed feet, a musky scent, and legs perfectly suited for a rich, slow braise. This week we’re diving deep into the wetlands with a recipe that turns the humble desman leg into a dark, hearty stew.

🌿 Ingredients:

4 desman hind legs, bone-in

2 onions, sliced thin

3 cloves garlic, crushed

2 turnips, peeled & diced

1 cup wild mushrooms (chanterelle, wood ear, or whatever’s foraged)

2 cups beef stock

1 cup dark beer or kvass

1 tsp smoked paprika

Fresh dill & parsley for garnish

👩‍🍳 Instructions:

Sear desman legs in a cast-iron pot until golden on all sides.

Add onions, garlic, and mushrooms — sauté until softened.

Pour in stock and beer, scraping up any browned bits.

Season with paprika, salt, and pepper.

Cover and braise low & slow (about 3 hours) until the meat slips off the bone.

Serve with rye bread to soak up the dark, murky broth.
