Did you know there are colors of eggs other than white and brown? While most of our chickens lay eggs that are brown, several of our chickens lay blue and green eggs. This is due to a special pigment that certain chickens produce causing the eggs to be a different color.
But not only chickens lay different colored eggs. Ducks can also! Cayuga ducks lay eggs that have a pigment on the outside of their shell causing it to look black or gray and the color changes throughout the laying season. Duck eggs are great for both eating and baking with!
Fun fact about Cayuga ducks is they are originally bred in Orange County, NY and then moved to the Finger Lakes region where they were named after the indigenous Cayuga people of the area.

The ducks and chickens love being out and foraging. Did you know that the color of the yolks of ducks and chickens can change based on the food that they eat? Colors from brown to a bright yellow are typical. It's common to have eggs with slightly different colors all in the same dozen as when the animals are out foraging they end up eating different natural foods.

Yesterday we spent some time at the farm harvesting some of our romaine and iceberg lettuce. If you are jumping into the world of growing and harvesting your own lettuce here are some tips and tricks for you!

1. Lettuce prefers partial to full shade and tends to bolt in hot weather. To keep your crops going until winter, try to plant them in a shady area.

2. Mature lettuce tends to get bitter and woody/tough. If you have let your lettuce go a little to far no need to worry. Just cut out the center stem to get rid of the bitterness.

3. When you harvest lettuce you want to do it first thing in the morning; out of the sun and in the cooler weather. If you want your lettuce to regrow simply cut it about .5”-1” above the dirt and lettuce will continue to grow all season.

4. If your fresh harvested lettuce has sat on the counter a little to long while prepping and has wilted, simply soak the lettuce in ice cold water for 15-30 minutes to help plump it back up.

5. Finally, if you are worried about pests like aphids or slugs (who enjoy lettuce just as much as you) simply soak your lettuce in ice cold water with some vinegar for thirty minutes. Make sure to give your lettuce a little swirl every five minutes to break loose any dirt or critters. After it is done soaking drain the water and give your lettuce a thorough rinse. We like to then spin our lettuce to make sure it’s nice and dry before bagging. Unnecessary moisture can cause lettuce to not keep as long!

And most importantly make sure to enjoy your hard earned, fresh home grown lettuce!

Did you know that chive flowers are 100% edible!?

A couple of ways that you can use chive flowers:
*Top your salads with them
*Pan fry them
*Add them to your butter
*Make chive blossom vinegar

If you’re feeling extra adventurous, add some chopped scapes, basil, rosemary, and thyme to some extra virgin olive oil and let it sit for a week. Strain it and mix it with your chive blossom vinegar and you have a lovely earthy salad dressing.
