Stuffed Lemon Cookies 🍋🍪

These Stuffed Lemon Cookies are the perfect combination of tangy citrus and sweet decadence! Soft, chewy lemon cookies filled with a creamy surprise make for a delightful treat that’s bursting with flavor. These cookies are perfect for any occasion, whether you're serving them at a party, enjoying with a cup of tea, or gifting them to someone special!

Ingredients:

For the lemon cookie dough:

2 1/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 tbsp fresh lemon juice
Zest of 1 lemon
1 tsp vanilla extract
For the filling:

1/2 cup cream cheese, softened
1/4 cup powdered sugar
1 tsp lemon juice
Zest of 1/2 lemon
For rolling:

1/4 cup granulated sugar (for rolling the cookies)
1/4 tsp lemon zest (optional, for extra flavor)
Directions:

Prepare the dough: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate large bowl, cream together the softened butter and sugar until light and fluffy. Add the egg, lemon juice, lemon zest, and vanilla extract. Mix until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together.

Make the filling: In a small bowl, beat together the softened cream cheese, powdered sugar, lemon juice, and lemon zest until smooth and creamy.

Assemble the cookies: Scoop a tablespoon of dough and flatten it slightly in your hand. Place a small spoonful of the cream cheese filling in the center, then fold the dough over the filling to encase it completely. Roll the dough into a ball and then roll it in the granulated sugar (and additional lemon zest if using). Place the stuffed dough balls on the prepared baking sheet about 2 inches apart.

Bake: Bake for 10-12 minutes or until the edges of the cookies are lightly golden. The centers may still look soft but will firm up as they cool. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Serve: Once cooled, enjoy these sweet, tangy stuffed lemon cookies! They’re perfect with a cup of tea or as a special treat for guests.
