Lunch today, I'm savoring a cucumber sandwich layered with mayo, mustard, pepper Jack cheese, and Black Forest ham.I've shared my meal plan in comment. Accompanying this delight is a serving of yellow pepper slices, generously spread with cream cheese and sprinkled with everything but bagel seasoning.

I have had this for lunch 3 days in a row now.
By far my favorite, easiest, high protein meal. Easy for work meal prep on the go that requires no cooking or reheating.
Takes 10min to prep.
100g protein. 776 cal
Poke Tuna, Imitation Crab, Cucumber “Salad”
Super filling and super flavorful. Light, fresh and doesn’t make you feel bloated.
EDIT ADDING HOW I PREPARE
For this serving. I use the following.
Full box of the poke
Full bag of the imitation crab
Two cucumbers sliced to your desire
One cup of the edamame
After that, I just eyeball the amount I want for the following
Sriracha (0 cal)
rice vinegar (0 cal)
soy sauce (0 cal)
kewpie mayo (100 cal for tbls i use way less)
Everything but the bagel seasoning (5cal)
Add it all to a bowl with a lid and shake it all up
That’s it!

What my kids eat! I post “what I eat in a week posts” but lots of people ask what my 5 and 8 year old eat. I have put this off, as posting what I eat opens myself up to enough criticism, without sharing what my children eat 😂 But, this is one of the most requested posts.
So, here are some of the meals they have eaten over the past 2 weeks including packed lunches for school and snacks.

Instant vanilla pudding $1.79
Angel food cake $3.50
Strawberries $3.00
Cool whip $2.29
Milk on hand
Make pudding and let set
Clean/cut strawberries
Layer sliced Angel cake, then pudding and strawberries. Layer a couple times. Top with cool whip and strawberries! My family loves this especially in the summer! For us we will eat off it for a few days after dinner.

Sprayed pan with “I can’t believe it’s not butter” and browned one side of tortilla. Sprayed the other side and flipped it and put in pie filling and just rolled it up.

Okay, so I normally do not post much and I am not one who typically takes photos of meals, but I came up with something last night that I thought was good enough to share.
Missing out on pasta? I was too and last night my wife and I almost broke, because we were craving chicken fettuccine alfredo.. I looked in the fridge and saw my egg life wraps and a light bulb turned on. Cut the wraps into narrow straps, and voila...pasta!!!
So, I cut an entire package of egg life wraps and cut them into 1/4 inch wide straps, and put them into a large frying pan with 2 tablespoons of olive oil and one teaspoon of Italian seasoning. Low heat for about 10 minutes (just to heat them and distribute seasoning)
Sauce was Bertoli Alfredo sauce which is 2 carbs per 1/4 cup.
Meal calculated to approximately 5-6 carbs. The texture was the only thing that I had to adjust to. The wrap noodles are just drier in texture than typical pasta, but I got my fix without the guilt.

Air Fryer Crispy Fried Onions
Ingredients
2 medium to large yellow onions or around 1 lb
1 tablespoon cooking oil
Instructions
Peel and cut the onion into thin round slices.
Drizzle oil over the slices and then gently separate the rings.
Place the onion rings in the air fryer basket. Fry them initially at 300F for 10 min. Gently mix the rings at 5 min intervals.
Now lower the temperature down to 240F and continue heating the rings. After every 5 min gently mixes the rings. It will take 15-18 min to get the desired color and texture

Just wanted to share my favorite sweet treat I've been making lately 😋
1pt Kodiak Muffins. This recipe makes 12 muffins (only 10 in the picture because my boyfriend and I each ate one right away 😅). I love them because they're low point and are great when I want a little something sweet haha. Bake at 350°F for 25 minutes!
EDIT: I just checked for those of you who don't use a food scale, the 16pts of Pancake Mix is equal to 1,1/3C and the 1pt of Cocoa Powder is equal to 5tbsp.
One downside about them is that they have gotten moldy before I finished all of them, I think it's because of all the moisture from the bananas, so this time I am going to keep them in the fridge and just microwave before eating. Hope you try and enjoy!

This was dinner…. Someone mentioned that it was high in carbs. I thought I did good. Am I wrong? I’m new to this.
Red, yellow and orange peppers, zucchini, broccoli, asparagus, mushrooms and sausage.
I put them all together in a bowl and tossed in EVOO and placed them in a single layer on the pan. I sprinkled garlic powder, chili powder, Mrs dash onion & herb and Mrs dash vegetable seasoning on them. Baked @ 400 for 8 minutes, flipped everything and baked another 8 minutes. Veggies were done, but still crisp and not soggy.

OH MY!! This is a game changer for this bag of chicken breasts. All I did was use the juice of 2 limes, and squeeze it in the frying pan. Then put the whole bag of frozen chicken in the pan and stir fry with a generous amount of the tajin seasoning. Now I have flavored chicken for my salads , for the work week 😀
