CHOCOLATE & SPRUCE DONUTS

Spruce trees are my favorite winter tree to work with in baking! Their flavor is slightly citrus, hinting at its high vitamin C content, and they add so much flavor to treats like these donuts. These are a dairy, egg & gluten-Free donut with loads of flavor.

I gathered spruce a couple days ago for a monthly class, and made a quick syrup. The donuts are then dipped in the spruce syrup, and topped with nettle seeds, wild roses, & sweet blend of cinnamon & spruce.

🌲Spruce, or any edible conifer, is a great winter forage that you can gather & use in your baking and meals. All the conifers (like fir & pine) taste a little different, and it’s really important to have a 100% sure identification as there are some poisonous & toxic conifers, like yew trees!

A little goes a long way, and it’s so important to harvest responsibly.

Spruce is a great tree to learn to identify as it has distinct needles that are rounded and can be rolled between your thumb and finger-fir & yew are both flat needles that can’t be rolled and there are loads of other ways to differentiate them that I’ll share more about on a video!
