Feeling blessed that I’m able to work with sunshine today! I have a total of 3 stainless steel steam sterilizers, all hand built, that can hold 150 bags per run. Once sterilized and cooled, these bags will be brought into my lab where I will open them up in front of a large hepa filter and inoculate them with mushroom grain! #mushrooms #growingfood

Starting my return to 2023 off strong with grain spawn! Mycelium, which is essentially the tree of the mushroom and typically grows under grown, is grown in house! It is grown and then suspended in a sterilized jar of liquid. A small amount of this liquid is then transferred out of the jar, into a bag of certified organic grain that has been sterilized. All of this is done at the Lab at Hana Mushroom! A room designed to be a sterile environment and equipped with hepa filters to throughly clean the air in the room. Over the next few weeks the mycelium will grow rapidly to consume each grain of rye in each bag. This is the beginning process to growing countless mushrooms here at Hana Mushroom! 2023, I'm coming for you! 💪 🍄

Mushroom risotto recipe:
garlic (minced) 3 tbsp
olive oil 2 tbsp
butter 2 tbps
shallots (minced) 3 tbsp
white wine .25 c
risotto 1.5 c
chicken broth 4 c
parm cheese(grated) 1 c
mushrooms 1 -2 c
s & p As needed
Sauté mushrooms with olive oil and butter, add salt, cook till crispy
saute oil, butter, shallots and garlic for two minutes, add rice, coat well in oil
deglaze with wine, cook all wine out, add salt & pepper
mix 4 cups of chicken broth, one cup at a time, let it absorb into the rice and then continue adding broth
after all stock is cooked in, add cheese and mushrooms
Top with Parmesan cheese and green onions.
