Made a variation on Korean Sigeumchi dish. I substituted microgreens (Peas, Sunflowers, and Buckwheat) for spinach. I blanched them for 45 seconds Added some Rice wine vinegar, some sesame oil, and soy sauce. Looks great and tastes just like I remember.

Peas, Sunflowers, Buckwheat. They take about 10 days to grow and are full of nutrients, vitamins, and antioxidants. The Peas are soft with a hint of sweet flavor. The Sunflowers actually taste like Sunflower seeds and are a good source of protein. Buckwheat has tangy flavor that goes well in salads or alone as a simple snack.
