Our "oh no, there is nothing for lunch" favorite recipe is a mushroom grilled cheese sammiches. Sautéed Oyster mushrooms are so versatile they became our staple. I usually cook them on Sunday with or without onions/garlic, depending on the mood. Then, if we run out of "school lunch" items, it takes 5 min to make a grilled cheese. To reduce the time to 3 min, I often broil 2 sides of the sandwich open faced to melt the cheese and put them together as we run out of the door. This grilled cheese will not be greasy and is Oh, so yummy! Here is one of the recipes. Feel free to experiment.

Here is a Gold Oyster and Spinach Frittata recipe. It's delicious fresh out of the oven or warmed up next few days. A great take to work lunch! Let me know if you try it.

10-15 oz of oyster mushrooms (any variety)
3-4 cloves of garlic finely minced
a splash of vermouth or white wine (optional)
1 onion
1 small bag of frozen spinach defrosted and squeezed dry
4-5 small potatoes boiled and cut up in cubes.
3 eggs
1/2 cup of cream
1/2 cup of shredded cheese (parm and/or cheddar are great)
Fresh or dry chives and parsley
pinch of nutmeg.
salt/ pepper to taste.

Sauté mushrooms in olive oil on medium heat until cooked about 8-10 min, add garlic for a few min and deglaze with wine.

Separately sauté onions until golden brown. Take off the heat and add potatoes, spinach, and cooked mushrooms. Season to taste and mix well.

In a separate bowl mix eggs, cream, cheese and herbs/nutmeg. Add vegetables and combine well. Adjust seasoning if needed. Bake in a greased baking dish for 30-35 min at 350F until golden on top. Voila!

Here is another simple recipe that's great to spice up your Lent or to get ready for Spring weather and that beach getaway!☀️ I like to get my ideas from vegan recipes and modify with my usual ingredients. These would be great protein addition to your salad, or a grilled cheese sandwich. For the carnivore in your family top their burger or a steak with these beauties! They'll thank you!
