Coconut Flour Bread

1 ½ cups coconut flour
6 large eggs
½ cup unsweetened coconut milk
¼ cup melted coconut oil
¼ cup erythritol (or your preferred keto sweetener)
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla extract

1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with coconut oil or line it with parchment paper.
2. In a large mixing bowl, combine the coconut flour, baking powder, and salt. Mix well to ensure there are no lumps.
3. In another bowl, whisk together the eggs, melted coconut oil, coconut milk, erythritol, and vanilla extract until smooth.
4. Gradually add the wet ingredients to the dry ingredients, stirring until fully combined. The batter will be thick.
5. Pour the batter into the prepared loaf pan and spread it evenly.
6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
7. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
