A little known secret…Beaver Dam Chilis make the best pepper jelly, or any jelly, you’ve never put in your mouth. The taste is similar to Red Hot candy many of us ate as kids. We are sending out peppers daily! The peak of our harvest time is just beginning, but it won’t last long. We will do custom orders or we can make you a nice variety box within your price range. We have everything from super sweet to super hot. Already this year we have mailed peppers from New Jersey to San Diego. 2 day shipping and they are always picked the day of or the evening before shipping them out. We do everything we can to ensure freshness so they will arrive to you like they just came out of the garden.

The wait is over!!! We have super hots, sweet peppers, and a little in between available for mail order and local delivery. We will announce when we will be set up at the Pueblo West farmers market on some Saturdays. The peppers are maturing quickly and they won’t last long. We will be posting often with updates and details until the end of the season.

Super hot Fathers Day giveaway!

Until production picks up we have made the decision to give away some super hot peppers when we have excess. We will deliver them to you at no charge in the hopes of creating some local enthusiasm for our product. Theses are hot!!! 1-2 will spice up a dish quite nicely. . They can be frozen and used later. You can eat them as well, but do so with caution. This promotion will likely last 4+ weeks. No catch or gimmick. We are bringing peppers to the people for free. Supplies are limited!

They are very fruity, but super hot! We call these the Pueblo Strawberry. It’s an excellent pepper to spice up a meal. Who wants to try em?

It won’t be long until we have some Beaver Dam Peppers available to the public. This variety is very fruity and sweet with less heat than a jalapeño. The placenta itself can be pretty hot and the heat has a really long delay that slowly builds. They are great for stuffing, salads, and snacking.

Some super hot varieties can take up to 180 days to produce. Rather than wait until fall for production we have elected to get a jump on the season by starting some varieties super early indoors. Although more costly and time consuming we should be producing super hot varieties as early as June-July. Here’s a peak at a few flats of some varieties we have already started. Bhutlah Orange Copenhagen

This is an orange variant of the Bih or Bhut Jolokia. It was discovered in 2009 in Copenhagen, Dennmark. It is also called the BOC for short. A grower named Soren Friis Larsen discovered orange colored peppers on his plant and grew it out for successive years. Him and his good friend Bjarne Hojlund then introduced them to other growers.

The fruits of the Bhut Orange Copenhagen are usually shorter than average Bhut Jolokias. They have a nice bright orange color with nice fruity tones. The heat level is much hotter than the Yellow Bhut Jolokia. They are very prolific.

Big Mustard Mama

The Big Mustard Mama is a superhot strain that is a variant of the Big Black Mama created by Troy Primeaux of Louisiana Lafayette University. Troy is the creator of the 7 Pot Primo and is a Horticulturist Major. This is a mustard olive green very bumpy nuclear hot pepper. It’s stability is unknown as many have not grown it out yet. We obtained our seeds from one of Troy’s close friends with his permission to grow and sell in 2014. The Big Mustard Mama is very productive and makes peppers over 2 inches in diameter and almost 3 inches long. It is known for making some Monster size specimens!

Bhutlah Scorpion Chocolate

This is the natural Chocolate variant of the Bhutlah Scorpion. The Bhutlah Scorpion is another deadly hot pepper created by Wisconsin grower Chad Soleski. What is not known is this. Is this a Red Bhutlah that just started producing monster Scorpion looking peppers within it’s own DNA? Or did a Scorpion variety from Chad’s pepper patch unknowingly cross into his Red Bhutlah?? We will never know. What we do know is Youtube hot pepper eaters across the U.S. say its one of the worlds hottest peppers in 2016! We nickname it and a few others we grow the Reaper Killer! The Bhutlah Scorpion Chocolate pepper can get larger than most Scorpion varieties. If you can get past the heat it has fruity tones in the background. The Bhutlah Scorpion Chocolate ripen from green to brown.

San Felipe

This Native chile is from the San Felipe Pueblo. The Elevation of San Felip is 5,200 feet which is a short drive north of Bernalillo, New Mexico. The town or Pueblo of San Felipe lies along the banks of the Rio Grande river and is home to many small farmers. The Pueblo was named in 1591 by a Castano de Sosa who named it after a Jesuit Priest who was martyred in Japan. It is also known for the Feast of St. Philip celebrated May 1st every year with Traditional Native Corn Dances. The San Felipe peppers have medium heat level. The peppers are 3 to 4 inches in length and almost an inch at its widest point. They have a thick enough flesh for roasting, frying and stuffing. But can also be used dried. The flavor is sweeter when green but gets more complex when red. The San Felipe chile plants are under 2 feet tall. The San Felipe peppers ripen from green to red. Note this is a genuine Native American chile. Many of these Native chiles look very similar but I can assure you they all have differences in flavor. Know this that by growing and sharing these Native species we are keeping them around for future generations. 15,000 SHU

Skunk Chocolate

The Skunk Chocolate pepper is a mean hot pepper variety developed by master Italian grower Rocco Maltesi. It is a cross between the MA Wartryx (created by Matthew Arthur) and the 7 Pot CARDI strain. The 7 Pot CARDI strain being the original official 7 Pot pepper from Trinidad. The result of this cross are mean extremely bumpy huge superhot peppers that sometimes have a scorpion like tail. I have gotten some so huge that they almost fill up the palm of my hand! The Skunk Chocolate chile plants seem to produce larger peppers than it’s red relative and more tails on the peppers. However the Skunk Red is more productive. The flavor is somewhat fruity but smoky in the Skunk Chocolate.

Carolina Reaper

This is an extremely hot variety developed by a grower named Ed Currie. It is also called HP22B pepper. As of 2013 it is over 7 generations old. Ed created this chili plant variety by crossing a Pakistani Naga with a Red Habanero type from St Vincent's Island in the West Indies. It is similar in looks to the Trinidad 7 Pot Primo.

It has been Scoville tested at Winthrop University and found by them to have an average heat level of over 1,400,000. These chili plants grow slow in the beginning like Nagas but are very productive. The Carolina Reaper chili plant has a nice fruity flavor similar to other super hots like the 7 Pot.

This pepper is not related to the famous Pepper X used in sauces by grower Ed Currie. That is a superhot Mustard colored strain. This is an unknown Brain Strain cross that came from plants that I purchased from another vendor. So why do we call it Pepper ###?? Because it’s Xtra Hot, Xtra Flavorful and Xtra Productive!! We don't claim it to be one of the hottest as we only trust in research not the latest fads or hype. It's extremely hot and has fruity tones like other 7 Pot strains. The Pepper ### Pepper has a Scorpion look but can get a longer tail and has more of a pimply skin than other Scorpions.

It is also called NagaBBG7 Red or Redgum. We believe this was created between 2012 and 2013. The creator of this pepper is expert chili grower Terry Smith from the U.K.. This is different from the Italian strain as the Naga used to make this variety is the famous Cornish Naga. It produces some wicked shaped elongated peppers that also have the classic Bubblegum color bleed up the calyx and stem. The flavor is kind of fruity with a good Naga or Ghost heat level. Terry made a beautiful chili here and it won’t disappoint you with heat or flavor.

Elephant Ear

The Elephant Ears is a rare large sweet Paprika type from Serbia and Croatia. It gets its name from because the peppers flatten to a shape resembling an ear. It is also called Slonovo Uvo. In Serbia, Croatia and Macedonia these peppers are roasted, stuffed and used to make sauces and condiments. In Serbia and Croatia it is famous for making a pepper preserve called Ajvar. Other peppers can be used to make Ajvar but the preferred pepper is Elephant Ears. It takes a few days to make but is worth the effort!

The Elephant Ears chile plants produces peppers over 6 inches in length and over 4 inches wide. The fruits ripen from green to red.
