One way to eat more salads? Prep some amazing toppings! Here are three make-ahead toppers that change everything
THE PICKLE PARTY CHICKEN SITUATION
This ridiculously easy protein boost starts with canned chicken transformed by all those briney bits hiding in your fridge.
2 cans chicken, drained
Whatever pickled things you’ve got (olives, banana peppers, cornichons)
2 Tbsp mayo
1 Tbsp mustard
2 Tbsp Greek yogurt
Salt, pepper, garlic powder
Fresh dill (or whatever herb is looking sad in your fridge)
Chopped cucumber or red onion for CRUNCH
Mix it all together. Store in the fridge for up to 4 days. Done and done.
THE CRUNCHY-TANGY SLAW SITUATION
This Korean-inspired cucumber-radish combo brings serious texture and bright flavor.
1/2 English cucumber
300g radish
1/2 Tbsp red chili powder
1 Tbsp sugar
2 Tbsp vinegar
1 Tbsp salt
1 Tbsp sesame oil
Julienne everything into matchsticks. Sprinkle radish with chili, sugar and salt—let hang out for 10 min. Drain, toss with cucumber, vinegar and sesame oil. This keeps for about 3 days.
THE GREEN GODDESS 2.0 DRESSING
This is the creamy, herby, slightly spicy situation your lettuce has been dreaming about.
1/2 cup mayo
1/4 cup sour cream or greek yogurt
Handful cilantro
1 jalapeño (seeds removed if you’re scared)
1 garlic clove
Juice of 1 lime
Salt and pepper
3 Tbsp olive oil, drizzled in while blending
Blitz everything except oil. Drizzle in oil while machine runs. It’ll thicken as it sits. Keeps for a week!
THE FINAL ASSEMBLY
When hunger hits, grab our frisée lettuce (or your favorite hydroponic greens) add your prepped components, and finish with:
Crumbly cheese (feta, blue, goat—whatever speaks to you)
Something sweet (sliced apple, pear, berries, or even a handful of dried fruit)
