Healthy Blueberry Peach Cobbler

Ingredients:
6-7 cups sliced peaches or blueberries or combination of the 2. (Peeling the peaches is optional)
3 Tbs cornstarch
1 tsp cinnamon
1 tsp vanilla extract
1/3 cup whole wheat or all-purpose flour
2 Tbs cornmeal
1 Tbs sugar, xylitol or Stevia sweetener
3/4 tsp baking powder
1/4 tsp salt
2 Tbs butter
1/4 cup milk

Instructions:
1. Preheat oven to 400.
2. Spray 8-in square baking pan with cooking spray.
3. To prepare filling, toss blueberries and/or peaches in large bowl with cornstarch, cinnamon and vanilla. Pour filling into baking pan. Make sure the cornstarch has dissolved.
4. Bake filling in oven 5 min. while preparing topping.
5. For topping, mix flour, cornmeal, sugar, baking powder and salt.
6. Cut butter into dry ingredients with 2 knives or a pastry cutter until chunks are pea-sized.
7. Drop topping by tablespoonfuls onto hot fruit mixture. Bake 20-25 min.
