Ingredients:
• 1 lb Elm Oyster Mushrooms, cleaned and sliced
• 2 tbsp olive oil
• 3 cloves garlic, minced
• 1-inch piece of ginger, grated
• 1 tbsp soy sauce or tamari

• 1 lb fresh shiitake mushrooms, stems removed and sliced
• 2 tbsp butter (or olive oil for a dairy-free version)
• 3 garlic cloves, minced
• 1 tbsp fresh thyme (or 1 tsp dried)
• Salt and pepper, to taste
• 1 tbsp lemon juice
• Fresh parsley, chopped (for garnish)

Lion’s Mane Mushroom Stir-Fry

Ingredients:
• 1 cup Lion’s Mane mushrooms, sliced
• 1 tablespoon olive oil or butter
• 1 bell pepper, sliced
• 1 small onion, sliced
• 1/2 cup snap peas or other veggies of choice
• 2 garlic cloves, minced
• 2 tablespoons soy sauce or tamari
• 1 tablespoon sesame oil
• 1 teaspoon grated ginger
• Optional: sesame seeds, green onions, and chili flakes for garnish

Instructions:
1. Heat the olive oil or butter in a large pan over medium heat.
