If you're only going to have one meal a day you could do worse than this ridiculously large salad featuring: pork shoulder, baby spring mix, macadamia nuts, sauted bell pepper, jalapeno, onion, and eggs, then topped with fresh tomato, cucumber, avocado, and of course microgreens! Oh, and some home fermented sauerkraut with jalapenos for a little kick. Yum!

New Keto salad for Spring: Start with lightly sauted spinach and microgreens in EVOO and MCT oil. Add fresh microgreens, spring mix, macadamia nuts, and home fermented cabbage, broccoli, carrots, cucumbers, and cherry tomatoes. Add a little of your favorite protein (ham in this one), cheese, and more EVOO, apple cider vinegar, and red wine vinegar. Enjoy!
